Ingredients

  • 1 cup coconut butter, softened– store bought or homemade recipe below in notes
  • 1/2 cup almond butter or cashew butter
  • 1/2 cup vanilla protein powder
  • 1/2 cup almond flour
  • 1/2 cup desiccated coconut
  • 1/3 cup maple syrup or honey
  • 1/4 cup rolled oats
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Optional Mix-Ins

  • 1/4 cup white or dark chocolate chips
  • 2 tablespoons chopped macadamia nuts
  • Lemon or lime zest

Instructions

  • Line a tray or plate with baking paper.
    If the coconut butter is solid, soften by placing the jar in warm water for a few minutes or give it a burst or two in the microwave.
    In a medium mixing bowl, stir together the softened coconut butter, nut butter, maple syrup, and vanilla until smooth.
    Add the protein powder, almond flour, shredded coconut, and sea salt.
    Stir until a soft cookie dough forms.
    Fold in any optional mix-ins.
    Scoop about 2 tablespoons of dough per cookie and roll into balls.
    Flatten gently with your palm or the back of a fork into a cookie shape.
    Refrigerate for 45–60 minutes until firm.
    Enjoy immediately or store chilled.
    Store in fridge for up to 1 week or freezer for up to 3 months.
