Ingredients
1 1/2cupsdried apricots
1cuprolled oats
1/2cupvanilla protein powder
1/3cupalmond butter or cashew butter
2tablespoonsfresh orange juice
2teaspoonsfinely grated orange zest
1/4cupmini dark chocolate chips
1teaspoonvanilla extract
Pinch of sea salt

Instructions
Add the dried apricots and oats to a food processor and pulse until roughly chopped.Add the protein powder, nut butter, orange juice, orange zest, vanilla and sea salt.Process until the mixture begins to come together into a sticky dough.Fold or pulse in the chocolate chips just until evenly distributed.If the mixture feels too dry, add an extra teaspoon of orange juice. If it is too sticky, add a little more oats.Roll into approximately 12–16 bite-sized balls.Roll in shredded coconut or chopped almonds if desired.Refrigerate for at least 30 minutes to firm up before serving.Store up to 1 week in the fridge or freezer for up to 3 months.
