Oaty Ginger Slice

I know it can be hard to imagine a delicious, satisfying sweet treat that does not contain chocolate or fruit, but this no-bake oaty ginger slice will certainly win you over, trust me!
Through my exploring, I quickly realised that a ginger crunch is a New Zealand traditional recipe. It has been passed down through generations and you can find it at most cafes. The first confirmed recipe for ginger crunch (also called ginger slice or ginger crunch slice) was in Edmond's Cookery Book, in New Zealand, in 1955.
Even though I was inspired by the traditional ginger crunch recipe, I wanted to create a much healthier version. This one is free from white flour, butter, icing sugar, golden syrup, and refined sugars.
I instead choose to sweeten it with dates and honey. They are much healthier alternatives, as well as full of added health benefits.

Ingredients

Base Crust

  • 1 cup oats, instant or quick
  • 1/2 cup almond flour or meal (ground almonds)
  • 1 cup desiccated coconut
  • 1 cup dates, soaked at least 30 minutes and drained
  • 3 tablespoons coconut oil, melted
  • 2 tablespoons ground ginger
  • 1 teaspoon vanilla extract
  • Pinch of salt

Ginger Cream Topping

  • 1 1/2 cups coconut butter, storebought or recipe below in notes
  • 1/2 cup honey or maple syrup
  • 1/3 cup almond butter
  • 1 1/2 tablespoons ground ginger

Instructions

Base Crust

  • Line an 9 x 5” loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    Place all slice base ingredients into a food processer and process until sticky and well combined. Be careful not to over process as its nice to have texture and different sized “bits” in your slice base crust.
    Press the base mixture into the bottom of your pan or dish evenly.
    Set aside in the fridge while you prepare the topping.

Ginger Cream Topping

  • In a small saucepan, add in the topping ingredients and stir on low heat until everything has dissolved and is well mixed.
    Pour on top of the base and put in the fridge to set for around 2 hours.
    Once set, cut into squares and serve.
    Keep it in the fridge for up to two weeks or freezer for 3 months.
