Caramel Rocky Road

I love a good Rocky Road. I love the heftiness and endless versatility. Though, unsurprisingly, I have views on what makes a good one! Ratios of add ins to chocolate matter.
So here’s my Rocky Road recipe. It’s easy. And it’s oh-so-good.
This sweet and creamy rocky road is as delicious as it is beautiful. Colourful, chocolatey and deliciously sweet, packed with nuts, dried fruit and marshmallows, all held together with mouth-watering caramel chocolate.
Rocky Road is about as simple as candy recipes get. Melt chocolate. Stir in add-ins of choice. Marshmallows, dried berries and peanuts are classic. Coconut is my must-have extra.
Its a super simple recipe that comes together quickly. It is made in one bowl so clean up is easy peasy. I like to pack mine with lots of texture and flavour. You can replace any of the nuts and fruit with your own favourites.
In different countries around the world, different ingredients are common. So basically anything goes. Just make it look colourful and taste delicious. Rocky Road is a recipe to make your own!
The only firm view I have is to make sure there is enough add-ins. Rocky Road has heft to it, it’s not a thin, wimpy piece of candy. It’s a thick slab. Nobody wants to bite into an enormous block of plain chocolate. We want to sink our teeth into a delightful medley of textures – soft marshmallow, chewy dried fruit and the crunch of nuts.
So don’t skimp on add-ins!! Use this recipe as a general guide, mixing and matching the fruit and nuts to whatever you have in your pantry.
Its time to get creative and weave your magic to create these better-for-you rocky road bars especially one like this packed with nutrient-rich ingredients. Its indulgent yet a nourishing dessert or the perfect guilt-free snack or treat.
It also makes the perfect edible gift and I can’think of an easier gift, truly. All this recipe involves is melting caramel chocolate, adding nuts, dried fruit, marshmallows and a couple of other ingredients, and hey presto! All done.

Ingredients

  • 2 6 oz blocks Caramilk chocolate (caramelised white chocolate), chopped
  • 1 1/2 cups marshmallows chopped
  • 1 cup almonds, flaked
  • 1/2 cup pistachios or peanuts, chopped
  • 1/2 cup cranberries or chopped apricots
  • 1/2 cup desiccated coconut
  • 1/4 cup coconut oil
  • 1 teaspoon vanilla extract

Instructions

  • Line an 8 x 8” baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    In a large mixing bowl, stir together nuts, cranberries, coconut and marshmallows.
    Place Caramilk chunks and coconut oil in a large heat-proof bowl. Microwave at full power for 1 minute. Stir. Microwave at 50% power in further 30 second bursts, stirring well in-between, until chocolate is completely melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Let cool slightly, (otherwise the marshmallows will melt) then pour into the bowl with nuts, cranberries, coconut and marshmallows.
    Stir until all the ingredients are well coated in chocolate.
    Working quickly, pour mixture into the prepared tin and press down evenly with a spatula or back of a spoon.
    Add optional toppings like chopped nuts or fruit or desiccated coconut.
    Refrigerate for 1 hour or until chocolate has set.
    Cut into 16-20 bars or squares (depending on what size you prefer) using a warm sharp knife. You can dip the knife in boiling water to heat it up. It’s also easier to cut if you take it out of the fridge 15-30 minutes before you cut it.
    Store in the fridge in an airtight container for up to 2 weeks or in freezer for up to 3 months. You can eat directly from either the fridge or freezer.
