Make yourself a batch with ingredients we all pretty much always keep on hand. We can eat one for a snack, add one to a packed lunch when you need a little something extra, or pull out after dinner when a sweet tooth starts calling.
Almond Joy Energy Bites
Ingredients
- 1 cup almond flour
- 1/2 cup almond butter
- 1/2 cup desiccated coconut
- 1/2 cup sliced almonds
- 1/2 cup rolled oats
- 1/4 cup honey or maple syrup
- 1/4 cup dark chocolate chips
- 1 teaspoon vanilla extract
Instructions
- In a mixing bowl add honey, almond butter, and vanilla extract and microwave for 30 seconds to 1 minute to warm the ingredients so they can be mixed together. Or place in a saucepan over a very low heat.Add almond flour, coconut, oats, and mix them in. Lastly add sliced almonds and chocolate chips and fold them in until evenly distributed. Scoop out small portions of the mixture and roll them into 20 (more or less) bite-sized balls. Place on a parchment-lined tray and refrigerate for at least 30 minutes to firm up. To store in fridge: Store in an airtight container or bag in fridge for up to 2 weeks. To store in freezer: Add energy bites to a zip top freezer bag and store in freezer for up to 3 months.
