Lime Cheesecake Mousse
Cheesecake mousse is a deliciously creamy and refreshing cheesecake dessert. Its perfect as a quick everyday dessert, but also delicious enough for a dinner party. It is zesty, creamy and gently sweet. This recipe is so easy and quick - you only need 4 ingredients! It tastes like key lime cheesecake without the crust but this recipe is great because it ends up being much healthier than regular cheesecake. Because this dessert doesn't have a crust, it means the calories, sugar and fat are avoided from the melted butter and the heaviness of a sugar laden biscuit crust. Instead, you get all the deliciousness in a light and airy form. Plus, it's sugar-free, low carb (one serving is just 2.5g net carbs) and ready in 5 minutes.Like many people, I love a ‘lil’ sweet something after dinner, and this recipe simply hits the spot. Ingredients
- 1 cup cream cheese
- 1 cup double cream/heavy cream
- 1/3 cup powdered sweetener such as allulose, erythritol, monk fruit or stevia drops, to taste
- 1-2 limes limes, juice and zest – depending on how lime-y you prefer
Instructions
- Add the cream cheese, sweetener and lime juice into a mixing bowl or food processor and process until smooth. This takes about 2-3 minutes. Be sure to scrape the sides of your bowl often to make sure it's all the same consistency.In a separate bowl, whip the heavy cream until soft peaks form.Fold the whipped cream into the cream cheese mix, grate in the lime zest and blend until nice and firm.Spoon the fluff into a piping bag and pipe into 6 dessert cups. If you don't have a piping bag, simply spoon into the cups!Decorate with lime zest and a slice of lime. Enjoy straight away or chill in the fridge for up to 5 days.You can freeze any leftovers in ice cube trays as bite sized fluff treats. Freeze for up to 3 months.
Notes
- To fold the whipped cream into the cream cheese, take your spatula and lightly bring the cream cheese from the sides of the bowl on top of the cream cheese in the middle.Folding is basically a lighter version of mixing. You are still combining the whipped cream with the cream cheese, but you are doing it gently so you can keep the air in it and make it light and fluffy.Flavour VariationsIf you omit the lime juice and zest, you can customise the flavor of this cheesecake mousse. Get creative!Vanilla - Add 1 teaspoon of vanilla extract.Lemon - Use lemon juice and lemon zest instead of lime.Chocolate - Add 2 tablespoons of cocoa powder and chocolate chips. Drizzle melted chocolate on top or swirl it through the mousse.Berry - Add strawberries, raspberries or blackberries. Option to also stir in some strawberry or raspberry jam or sugar free fruit syrup.Peanut butter -Stir in 2 tablespoons of soft peanut (or any other nut) butter.What to serve with cheesecake mousseThere really are SO many different ways you can serve this dessert!While it is absolutely delicious on its own, you could dress this one up with fresh fruit, chopped nuts, shredded coconut or seeds like hemp. Or add some drizzled berry or chocolate sauce for a gorgeous parfait.If you prepare the mousse in advance and looks are important, pipe it into cups directly before serving. That way you won't mess it up when you cover it with cling film.
