3-Minute Healthy Fudge

Today I bring you a recipe that is fast, easy and delicious. It requires few ingredients, minutes of melting/stirring time and no candy thermometer is needed! Its creamy, rich, and decadent yet healthy!
It’s incredibly simple to make and you will love it! It’s great for dessert platters, or any time you want a piece of deliciousness. But be warned, its hard to stop at just one piece! I would put it in the category of “bet you can’t eat only one!”
But that’s ok, as its healthy and won’t do any harm to your healthy eating plan (if you are reasonable about it!)
Fudge has a storied history dating back to the late 19th century. While the exact origins are somewhat murky, it is believed that fudge first appeared in the United States, possibly as a result of a happy accident during the making of caramel.
The word “fudge” itself became synonymous with a sweet treat around the 1880s, and by the early1900s, fudge recipes began appearing in cookbooks across America.
One of the reasons fudge has remained so popular over the years is its versatility. With a base of sugar, butter, and milk or cream, fudge can be flavored in countless ways, from chocolate and vanilla to peanut butter and maple. The texture can range from smooth and creamy to slightly crumbly, depending on the method and ingredients used.
But it was time to have a ‘healthifed’ version. This recipe is like regular fudge - super rich, uber decadent - but secretly healthy and guilt-free!  Yup, that means no butter, no white sugar and no sweetened condensed milk…  just pure, fudgy, nutty, chocolatey goodness.
With homemade fudge, you have complete control over the flavors and ingredients. You can experiment with different extracts, add-ins, and toppings to create a fudge that suits your taste perfectly.
Also when you make fudge at home, you can choose high-quality ingredients and avoid preservatives or artificial additives found in commercial products.
The big secret here is that you will have the option to use homemade condensed milk, free of the LOADS of sugar in store bought stuff. 
The facts are…manufacturers take out about 60% of the water from the milk to “condense” it down. After they “condense” the milk, they add about 40% sugar to fill the void from the water.
I’m sure you’re asking yourself why the manufacturers do this. Well, the added sugar means the shelf life is longer, plus transporting the milk is easier due to not having to store it in cooler temperatures.
Its always about the convenience to them, rather than people’s health.
But when you take the time and effort to make your own condensed milk, especially if its from coconut cream to make this delightful fudge, you get all the real, natural flavors - no artificial food flavourings here! Each little cube is like a piece of heaven.
This fudge is super soft, yet holds its shape long enough for you to pop it in your mouth…  where it will then melt in your mouth.
The recipe for the sugar free homemade condensed milk is below in notes. It really very easy to do and you can keep some in your fridge so its ready to add a dollop on EVERYTHING for a super healthy treat.
It will be something you can enjoy regularly as part of a healthy eating plan. Its high in medium-chain triglycerides (MCTs), a form of beneficial fat that can increase energy levels and enhance brain function and many other health benefits.

Ingredients

  • 2 cups chocolate chips
  • 1 cup condensed milk -store bought or sugar free recipe below in notes 
  • 1 teaspoon vanilla extract

Optional Add Ins

  • 1/2 cup roasted nuts, shredded coconut, raisins, peanut butter and/or dried cranberries
  • Pinch sea salt

Instructions

  • If you are going to make your own homemade sugar free condensed milk make that first so its ready when you go to make the fudge (recipe below in notes).
    Line a small 5 x 7 loaf or baking pan with parchment paper on the bottom and sides leaving some over hanging to act as a handle to get the bars out easier for cutting. Or use a silicon pan.
    Place chocolate and condensed milk in a microwave-safe bowl. Microwave on high for 1 minute. Stir. Microwave another 30 seconds. Stir. If chocolate is still not fully melted, microwave in 20-second increments at 50% power.
    When you have a smooth creamy texture, stir in vanilla (and sea salt, nuts and/or raisins if using). Pour chocolate mixture into prepared pan. Chill in fridge for at least1 hour.
    Remove fudge from pan by lifting outside flaps of parchment. Cut into 20 or more smaller squares. (hide some for yourself for later!). Store in an airtight container. Refrigeration is not necessary.
