If you love a sweet treat that is chewy, chocolatey, and packed with nourishing ingredients, and no bake, these Coconut Date Hemp Protein Bars are going to become a new favourite.

The result is a wonderfully satisfying combination of soft, chewy coconut filling and rich chocolate that gives a little snap with every bite.

Think of them as a cross between a coconut chocolate bar and a homemade energy slice, but with an extra nutritional boost from hemp seeds. And the best part? No oven, no complicated ingredients, and very little preparation time. Just blend, press, cover with chocolate, and chill!

Why You Will Love These Coconut Date Hemp Protein Bars

There is something special about combining coconut, dates, and chocolate. The dates provide a naturally sweet, almost caramel-like flavour, while the coconut adds a delicious tropical chewiness.

Then come the hemp hearts. These little nutritional powerhouses blend beautifully into the mixture, adding a subtle nutty flavour without overpowering the other ingredients.

The chocolate topping brings everything together, transforming a simple energy bar into something that feels like a proper dessert.

These bars are perfect for:

Afternoon snacks with a cup of tea
A little something sweet after dinner
Pre- or post-workout fuel
Lunchbox treats
Healthy meal preparation
Grab-and-go snacks

They are also wonderfully convenient because you can make a batch and keep them ready in the fridge or freezer.

Hemp Hearts: Small Seeds, Big Nutrition

Hemp hearts are the soft, edible centres of hemp seeds, and they are one of our favourite ingredients for adding extra nourishment to homemade snacks. They are naturally rich in plant-based protein and contain all nine essential amino acids, making them a source of complete protein.

They also provide beneficial unsaturated fats, including omega-3 and omega-6 fatty acids, along with minerals such as magnesium, iron, and zinc.

Protein plays an important role in maintaining and repairing muscles, while healthy fats contribute to a balanced diet and help make snacks more satisfying.

The beauty of hemp hearts is their versatility. They have a mild, slightly nutty flavour and a soft texture, so they disappear almost effortlessly into energy balls, bars, smoothies, and other no-bake treats. In this recipe, they work alongside protein powder and nut butter to create a more substantial snack.

Naturally Sweetened With Dates

Dates are another ingredient we love here at Blended Bites. When blended, they create a wonderfully sticky, caramel-like paste that helps bind everything together without needing refined sugar in the base. They also provide dietary fibre, potassium, and natural sweetness.

Medjool dates work particularly well because they are soft, moist, and easy to blend. If your dates are a little dry, simply soak them in warm water for 10 minutes, drain thoroughly, and they are ready to use.

The combination of dates and coconut creates a texture that is chewy without being overly dense, while the nut butter adds creaminess and richness.

The Chocolate Topping Makes Them Special

Let us talk about the chocolate because, really, who does not love a thick layer of chocolate on a homemade snack bar?

Melted dark chocolate creates a delicious contrast with the naturally sweet coconut and date filling. Once chilled, it firms into a smooth chocolate shell that makes these bars look and taste like something from a specialty chocolate shop.

You can use your favourite dark chocolate, or choose dairy-free chocolate if preferred. A little coconut oil stirred into the melted chocolate helps create a smoother topping that is easier to slice.

For an extra-special finish, sprinkle shredded coconut or hemp hearts over the chocolate before it sets.

A Delicious Example Of Addition Eating

At Blended Bites, our philosophy is simple: Add, Not Subtract. Rather than focusing on eliminating foods you enjoy, we believe in adding more nutrient-dense ingredients to everyday meals and treats.

These bars are a perfect example. We are taking something familiar and delicious – a chocolate-covered coconut bar – and adding hemp hearts, protein powder, nuts, and naturally sweet dates. The result is still a sweet treat, but one that also contributes protein, fibre, and beneficial fats. It is about enjoying food while giving your body more of the nutrients it needs.

Make Them Your Own

One of the best things about this recipe is how easily you can customise it.Try adding orange zest for a chocolate-orange variation, chopped almonds for crunch, or a little cinnamon for warmth. You could even replace the almond butter with cashew butter for a milder flavour. However you make them, these Coconut Date Hemp Bars are proof that healthy treats do not need to be complicated to be delicious. ✨

Ingredients

Coconut Date Hemp Base

  • 1 cup soft Medjool dates, pitted
  • 1 cup desiccated coconut
  • 1/2 cup hemp hearts (hulled hemp seeds)
  • 1/2 cup almond flour
  • 1/2 cup vanilla protein powder
  • 1/3 cup almond butter or cashew butter
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon vanilla extract
  • Pinch of sea salt
  • 1-2 tablespoons milk of choice, if needed

Chocolate Topping

  • 1 cup dark chocolate chips
  • 1 tablespoon coconut oil

Optional Toppings

  • Extra shredded coconut
  • Hemp hearts
  • Flaky sea salt
  • Chopped almonds

Instructions

  • Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
Add the pitted dates to a food processor and process until they form a sticky paste. If the dates are dry, soak them in warm water for 10 minutes and drain well before blending.
Add the shredded coconut, hemp hearts, almond flour, protein powder, nut butter, melted coconut oil, vanilla, and sea salt.
Blend until the mixture begins to clump together and holds its shape when pressed between your fingers. Add milk, one tablespoon at a time, only if the mixture is too dry.
Transfer the mixture to your prepared tin and press down using the back of a spoon or the bottom of a glass. Smooth the surface and refrigerate for 15–20 minutes.

Chocolate Topping

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
Pour the melted chocolate over the chilled base and spread evenly to cover.
Sprinkle with extra coconut, hemp hearts, or flaky sea salt while the chocolate is still soft.
Refrigerate for approximately 45–60 minutes, or until the chocolate has firmed up.
Remove from the tin and cut into 8-10 bars using a sharp knife. For cleaner slices, allow the bars to sit at room temperature for a few minutes before cutting.
Store in an airtight container for up to 1 week or freeze for up to 3 months, separating layers with baking paper to prevent sticking.
Tip: For a softer, chewier texture, allow frozen bars to sit at room temperature for 5–10 minutes before enjoying.
