Creamy, Zesty & Sunshine in Every Bite (Blended Bites Style)
If you are someone who loves bright, fresh desserts instead of rich chocolate treats, these Sunshine Lemon Protein Bars are about to become your new favourite recipe. They have a chewy walnut and date base, a silky lemon protein filling made with cashews and coconut cream, and a luscious cheesecake-like texture that melts in your mouth.
They are sweet, tangy, creamy, and incredibly satisfying – all without turning on the oven.
At Blended Bites, we love proving that healthy treats don’t have to taste “healthy.” They can be vibrant, indulgent, and bursting with flavour while still being made from nourishing ingredients. These Lemon Protein Bars are the perfect example.
The first thing you will notice is the beautiful contrast between the two layers. The base is rich and naturally sweet, while the top is smooth, creamy, and bursting with fresh lemon flavour. Together they create a dessert that is reminiscent of classic lemon cheesecake – but with wholesome ingredients your body will thank you for.
The walnut and date base is simple but incredibly delicious. Walnuts bring a naturally buttery flavour and satisfying crunch before blending into a soft, chewy crust. They are also rich in healthy fats, plant compounds and minerals that make them one of nature’s most nutritious nuts.
Medjool dates are the perfect natural sweetener. Their caramel-like flavour binds the crust together beautifully without needing refined sugar or syrups. They also add fibre and a touch of natural sweetness that balances the tangy lemon filling perfectly.
Then comes the creamy layer – the real star of the recipe.
Raw cashews have become famous for creating dairy-free cheesecakes, and for good reason. Once soaked and blended, they become unbelievably smooth and creamy. Combined with rich coconut cream, they create a luxurious filling that tastes every bit as indulgent as traditional cheesecake.
Fresh lemon juice and finely grated zest give these bars their bright, refreshing flavour. Lemon doesn’t just make desserts taste lighter – it also adds an uplifting freshness that makes every bite feel vibrant and satisfying.
To make these bars even more nourishing, vanilla protein powder is blended into the filling. It adds sweetness, boosts the protein content, and creates a more satisfying dessert that helps keep you fuller for longer.
Protein is one of the reasons these bars work so well as more than just dessert. Unlike many sweet treats that leave you searching for another snack shortly afterwards, protein helps slow digestion, supports muscle recovery, and contributes to steady energy levels.
That means these bars are just as perfect for an afternoon pick-me-up or post-workout snack as they are for dessert.
And in true Blended Bites style, this recipe embraces the philosophy of Addition Eating. Rather than focusing on foods to avoid, you are adding more whole foods, more protein, and more nourishing ingredients into your day.
Healthy eating becomes much easier when the food tastes this good.
Another thing we love about these Lemon Protein Bars is how beautifully they store. In fact, they taste even better after a night in the refrigerator as the flavours have time to develop and the filling becomes even creamier.
They are also freezer-friendly, making them ideal for meal prep. Simply slice them into bars and keep a stash ready whenever a craving strikes.
If you would like to personalise the recipe, it is easy. Add shredded coconut to the base for a tropical twist, sprinkle toasted coconut over the top, or garnish with crushed pistachios for extra crunch. You could even add fresh blueberries or raspberries on top for a burst of colour and flavour.
The possibilities are endless.
These Lemon Protein Bars are proof that healthy desserts can be elegant, refreshing, and completely irresistible. With their creamy cheesecake-like filling, naturally sweet crust, and bright citrus flavour, they are the kind of recipe you will find yourself making all year round.
One bite, and you will understand why lemon lovers simply can’t resist them.🌻

- Lemon zest
- Thin lemon slices

- Freeze-dried raspberries
Instructions
- Note: Place the can of coconut cream or milk in the fridge or freezer for at least 1-2 hours before making these bars to allow coconut cream to separate.Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.

Depending on the power of your blender this might take a few minutes. Stop blending to scrape the sides and continue to blend until very smooth. Taste test and add more maple syrup or lemon if you think it needs it.Pour the filling over the prepared base and smooth the top.Refrigerate for at least 4 hours, or freeze for 2 hours until firm.Slice into 8 bars (or more smaller squares) and garnish with your favourite toppings before serving.Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 2 months.
