Why Coconut Butter?
If you have never baked or made treats with coconut butter before, you are in for a treat. Unlike coconut oil, coconut butter is made from the whole coconut flesh, giving it a naturally creamy texture and rich coconut flavour. It pairs beautifully with almond butter, creating a silky smooth consistency that makes these bars almost melt in your mouth.
Coconut butter also contributes healthy fats that help make these bars wonderfully satisfying. Combined with protein powder and almond butter, it creates a snack that provides lasting energy rather than the quick sugar rush of many packaged treats.
A Snack That Keeps You Going
Protein and healthy fats are a winning combination when it comes to satisfying snacks. Instead of leaving you hungry an hour later, these bars help keep you fuller for longer, making them ideal for busy afternoons, travelling, or whenever you need something convenient and nourishing.
They are also incredibly versatile. Enjoy one straight from the fridge, crumble one over Greek yogurt, or pop a frozen bar into your lunchbox – it will thaw perfectly by snack time.
Creamy, Nourishing and Completely Satisfying
These Almond Coconut Butter Protein Bars are proof that healthy snacks don’t have to be complicated. A few wholesome ingredients come together to create a rich, creamy treat that is every bit as satisfying as a bakery dessert while providing protein and nourishing fats to help fuel your day.
Whether you are preparing snacks for the week, looking for a healthier dessert, or simply love the combination of almonds and coconut, these bars are sure to become one of your favourites.

Almond Coconut Butter Protein Bars
Ingredients
Protein Bar Base
- 1 cup oat flour (oats blended to a flour)
- 3/4 cup almond butter
- 1/2 cup coconut butter, softened, store bought or homemade recipe below in notes
- 1/3 cup vanilla protein powder
- 1/4 cup maple syrup or honey
- 1 teaspoon vanilla extract
- 2-3 tablespoons milk of choice, if needed
- Pinch of sea salt
Optional Chocolate Topping
- 1/2 cup dark chocolate chips
- 2 teaspoons coconut oil
- 1 tablespoon chopped toasted almonds
- 1 tablespoon toasted coconut flakes
Instructions
- Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting. If your coconut butter is solid, soft by placing the jar in warm water for a few minutes or give it a burst or two in the microwave. In a medium bowl, combine the almond butter, softened coconut butter, maple syrup and vanilla extract. Stir until smooth and creamy.Add the oat flour, protein powder and sea salt. Mix until a thick dough forms. If the mixture feels too dry, add milk one tablespoon at a time until it comes together.Transfer the mixture into the prepared pan and press firmly into an even layer using the back of a spoon or spatula.Place in the refrigerator while preparing the topping.
Chocolate Topping (optional)
- Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together. When the chocolate is melted, lift from the bars from the pan and slice into 8 bars or more smaller squares.Pour or drizzle over the bars and sprinkle with chopped almonds and toasted coconut before the chocolate sets.Refrigerate for1–2 hours until completely firm.Store in an airtight container in the refrigerator for up to one week or freeze for up to two months.Tips & VariationsUse cashew butter instead of almond butter for an even creamier texture.Add a tablespoon of chia seeds or hemp hearts for extra nutrition.Mix shredded coconut into the base for additional texture.Add a little lemon zest for a fresh coconut slice flavour.Swap the dark chocolate topping for white chocolate if you prefer a sweeter finish.
