Ingredients

Protein Patties

  • 1 cup almond flour
  • 1 scoop vanilla powder
  • 1/4 cup almond butter, cashew butter, or peanut butter
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon finely grated orange zest
  • 1 tablespoon fresh orange juice
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons milk of choice, if needed
  • Pinch of sea salt

Chocolate Coating

  • 1 cup dark chocolate chips
  • 1 tablespoon coconut oil

Optional Toppings

  • Finely grated orange zest
  • Cacao nibs
  • Chopped pistachios
  • Toasted coconut
  • Flaky sea salt
  • Freeze-dried orange pieces

Instructions

  • Line a baking tray with baking paper.
    In a bowl, combine the almond flour, protein powder and sea salt.
    Add the nut butter, maple syrup, orange zest, orange juice and vanilla.
    Mix until a soft, thick dough forms. If the mixture seems dry, add milk one teaspoon at a time until it reaches a soft, mouldable consistency.
    Divide the mixture into 8–10 portions.
    Roll each portion into a ball, then gently flatten into small patties.
    Place the patties on the prepared tray and refrigerate for 20–30 minutes.

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Dip each chilled patty into the melted chocolate, coating completely or just the top and sides.
    Return to the baking paper and immediately sprinkle with your chosen toppings.
    Refrigerate for 20–30 minutes, or until the chocolate coating has set.
    Store in an airtight container in the refrigerator for up to 1 week. They can also be frozen for up to 2 months. Allow frozen patties to soften for a few minutes before eating.
