Protein Patties
1cupalmond flour
1scoopvanilla powder
1/4cupalmond butter, cashew butter, or peanut butter
2tablespoonsmaple syrup or honey
1teaspoonfinely grated orange zest
1tablespoonfresh orange juice
1teaspoonvanilla extract
1-2tablespoonsmilk of choice, if needed
Pinch of sea salt
Chocolate Coating
1cupdark chocolate chips
1tablespooncoconut oil
Optional Toppings
Finely grated orange zest
Cacao nibs
Chopped pistachios
Toasted coconut
Flaky sea salt
Freeze-dried orange pieces
Instructions
Line a baking tray with baking paper.In a bowl, combine the almond flour, protein powder and sea salt.Add the nut butter, maple syrup, orange zest, orange juice and vanilla.Mix until a soft, thick dough forms. If the mixture seems dry, add milk one teaspoon at a time until it reaches a soft, mouldable consistency.Divide the mixture into 8–10 portions.Roll each portion into a ball, then gently flatten into small patties.Place the patties on the prepared tray and refrigerate for 20–30 minutes.
Chocolate Coating
Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Dip each chilled patty into the melted chocolate, coating completely or just the top and sides.Return to the baking paper and immediately sprinkle with your chosen toppings.Refrigerate for 20–30 minutes, or until the chocolate coating has set.Store in an airtight container in the refrigerator for up to 1 week. They can also be frozen for up to 2 months. Allow frozen patties to soften for a few minutes before eating.
