Raspberry Coconut Protein Fudge
Ingredients
- 1 cup coconut butter, softened, store bought or homemade recipe below in notes
- 1 cup freeze-dried raspberries or ¾ cup fresh raspberries*
- 2 scoops vanilla protein powder
- 2-3 tablespoons maple syrup or honey
- 1 teaspoon vanilla extract
- 2-4 tablespoons coconut milk (if needed)
- Pinch of sea salt
Optional Toppings
- Melted dark chocolate or white chocolate drizzle
- Freeze-dried raspberry pieces
- Shredded coconut
Instructions
- Note: Fresh raspberries*If using fresh raspberries, blot away excess moisture with paper towels before blending for the firmest fudge.Line an 8 x 8-inch square pan or loaf tin with parchment paper.If your coconut butter is solid, place the jar in hot water for a few minutes or give it a couple of bursts in the microwave.Add the coconut butter, raspberries, protein powder, maple syrup, vanilla, and sea salt to a food processor or high-speed blender.Blend until completely smooth and creamy. If the mixture is too thick, add the coconut milk one tablespoon at a time until smooth but still thick.Spread the mixture evenly into the prepared pan and smooth the surface with a spatula.Sprinkle with freeze-dried raspberries or shredded coconut if desired.Refrigerate for 2–3 hours, or freeze for about 1 hour until firm.Lift the fudge from the pan using the parchment paper and cut into 20 (more or less) small squares.If desired, drizzle with melted dark or white chocolate before serving.Tips & VariationsFor an extra burst of raspberry flavour, stir through a handful of chopped freeze-dried raspberries before chilling.Chocolate protein powder creates a delicious chocolate-raspberry version.Top with chopped pistachios or almonds for a little crunch.For a cheesecake-inspired twist, add 2 tablespoons of softened cream cheese to the mixture before blending.Store in an airtight container for up to 1 week or freezer for up to 2 months.
