Cashew Coconut Healthy Fudge

This fudge recipe manages to be nutritious and delicious and will cut cravings and eliminate hunger - in a true healthy way with no nasty ingredients.Plus you can make this fudge in only ten minutes! Keep some in the freezer at all times to finish off a meal in a healthy way or just for an instant pick-me-up!
Ingredients
- 1 1/2 cups cashews, soaked 3+ hours and drained
- 1 cup coconut butter, store bought or recipe below in notes
- 1/2 cup desiccated coconut
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 2 tablespoons freeze dried raspberries or strawberries
- Extra shredded coconut to sprinkle on top
Instructions
- Line an 8 x 8 inch (or similar) baking pan or dish with parchment paper. Place cashews in food processor and process until broken down and crumbly. Place coconut butter and honey in small sauce pan and gently heat until melted, stir until well combined. Add coconut and vanilla extract and stir again.Add to cashews in food processor and pulse a few times to combine. Leave a little chunky as its nice to have some different sized ‘bits’for texture.Scoop the mixture into lined pan, spread out evenly. Sprinkle freeze dried fruit and swirl around with a spoon so some gets down into the fudge dough. Refrigerate until set and cut into squares of your preferred size.Keep in fridge for up to 2 weeks or freezer for up to3 months.
