Ingredients

  • 1 1/2 cups dried apricots
  • 1 cup rolled oats
  • 1/2 cup vanilla protein powder
  • 1/3 cup almond butter or cashew butter
  • 2 tablespoons fresh orange juice
  • 2 teaspoons finely grated orange zest
  • 1/4 cup mini dark chocolate chips
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Optional Coatings

  • Shredded coconut
  • Finely chopped almonds
  • Extra orange zest

Instructions

  • Add the dried apricots and oats to a food processor and pulse until roughly chopped.
    Add the protein powder, nut butter, orange juice, orange zest, vanilla and sea salt.
    Process until the mixture begins to come together into a sticky dough.
    Fold or pulse in the chocolate chips just until evenly distributed.
    If the mixture feels too dry, add an extra teaspoon of orange juice. If it is too sticky, add a little more oats.
    Roll into approximately 12–16 bite-sized balls.
    Roll in shredded coconut or chopped almonds if desired.
    Refrigerate for at least 30 minutes to firm up before serving.
    Store up to 1 week in the fridge or freezer for up to 3 months.
