Coconut Lime Energy Bites
Bursting with flavor is what comes to mind to describe these coconut lime energy bites. Small but mighty, they are packed with flavor in every bite. These healthy snacks are easy to make and great for grab-and-go energy boosting snack. Lime is the hero in this recipe and it pairs perfectly with coconut to create a tasty tropical flavour and provides a good hit of vitamin C. This is key for helping your body absorb the iron coming from the almonds, cashews and dates. What a great way to hit your nutrition goals without giving up taste.
Ingredients
- 3/4 cup almonds
- 1/4 cup cashews
- 1 cup dates, soaked at least 30 minutes and drained
- 1 cup desiccated coconut
- 1/2 teaspoon vanilla extract
- 1/4 cup coconut oil, melted
- 2-3 limes, juice and zest depending on how lime-y you prefer
Coating
- 1/2 cup desiccated coconut to roll bites in
Instructions
- Place cashews, almonds and coconut in a food processor and process until broken down and crumbly. Add the dates, coconut oil and vanilla extract and process until well combined into a sticky dough.
- Transfer the mixture to a large bowl and add the lime zest and juice from 2 limes and mix together until well incorporated.In a shallow bowl or a large plate, add the remaining ½ cup of coconut and using a tablespoon or large spoon, scoop out the nut and date mixture and use your hands to roll into 10-12 balls.Roll the balls in the coconut to coat the outside of the balls.Store in refrigerator.
