Green Tea, Ginger & Lemon Gummies
Ingredients
- 1 cup brewed green tea (strong, cooled)
- 4 tablespoon unflavored gelatin powder
- 1/4 cup fresh lemon juice
- 1 tablespoon grated fresh ginger
- Optional: honey, to taste
Instructions
- For a more vibrant green colour add a few drops natural green food colour or make your own – cook tender, greens (such as spinach) in a tiny bit of water for about a minute. A few drops of the juice will give a very concentrated green.Steep 2-3 green tea bags in 1 cup hot water for 5 minutes. Remove the bags and let the tea cool slightly.In a small saucepan over low heat, whisk together green tea, lemon juice, and grated ginger.Sprinkle gelatin powder over the liquid, stirring constantly until completely dissolved (about 2minutes). Be careful not to overheat. If desired, add honey at this stage. Taste test and add a tablespoon or two of honey if you think it needs it.Pour the mixture into silicone molds or a parchment-lined dish. Refrigerate for 1–2 hours until firm.Pop the gummies out of the molds or cut into small squares and store in an airtight container in the fridge for up to 1 week.
