Pineapple Coconut Ice Cream (2 Ingredient)

Hello to the perfect dessert, snack or treat. This pineapple ice cream recipe is SO SIMPLE, yet SO GOOD. And all you need is a blender!

Think pineapple soft serve but today we are making a healthier and lighter version. Made with just frozen pineapple chunks and coconut milk, it’s creamy, light and refreshing, and tastes absolutely delicious.

Ingredients

4 cups frozen pineapple chunks

1 cup full fat canned coconut milk or cream

Instructions

Place frozen pineapple in a food processor (save some to put back in as larger pieces after blending for texture).

Pulse a few times until it has been broken into smaller pieces. 

Add coconut milk or cream and pulse until smooth.

Serve as it is as soft serve or freeze until firm.
