Raspberry Coconut-Cashew Fudge
Ingredients
- 1 cup coconut butter – store bought or homemade recipe below in notes
- 1 cup fresh or frozen raspberries (thawed)
- 1 cup desiccated coconut
- 1/2 cup cashews
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
Instructions
- Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the fudge out easier for cutting. Or use a silicon baking pan or dish.Place coconut butter in a small dish and microwave at in 20 second bursts until melted. Or place in a small sauce pan and gently heat until melted. Stir continuously until thoroughly melted, then remove immediately to avoid burning. Add honey and stir to combine.Into a food processor add melted coconut butter and honey, raspberries, coconut, cashews and vanilla and pulse a few times to combine the ingredients. Be careful not to over process as its nice to have texture variance and different sized “bits” in your fudge.Taste test and add more honey or vanilla if you think it needs it.Scoop out the mixture into your lined pan and spread out evenly with a spatula or back of a spoon. Place in fridge or freezer for 30 minutes to firm up. Once firm, lift out of pan with parchment paper handles and slice into 12-16 squares or triangles Store in fridge for up to a week or freezer for up to 3 months.You can enjoy this right out of the freezer as a very firm 'fudge-like' treat or out of the fridge as a gorgeous soft fudge.
