I’ve taken the flavors I love and turned them into something that feels like a treat but is made with nutrient-dense, clean ingredients. A sprinkle of sea salt ties it all together. I love how amazing new food trends are being created on internet websites like TikTok and some of them go viral and get loads of attention. One of them that is making a huge buzz is around what is called “bark” – layers of yummy foods placed in flat layers on top of each other then frozen. Once frozen the “bark” is broken or cut into squares.
The bottom layer is usually something that can be sliced in flat pieces like dates, chocolate, cottage cheese, banana slices or even strawberries slices. Then layers of yummy things like dried fruit, nuts, seeds, nut butter and coconut is added to create a simple and healthy dessert or snack. Then the whole thing is frozen and broken or cut into pieces.
I have tried a few of these recipes recently and they do not disappoint. Its not every day that a food trend exceeds my expectations, but this viral white chocolate bark is definitely a winner.

Bark is pretty much the easiest sweet treat you can possibly make. Endless flavor possibilities, 3-4 ingredients, 5 minutes to put together and 20-30 minutes to chill. It’s hard to even call this a recipe. In fact, there are really no measurements needed.

I will warn you, however, that this white (or dark or milk) chocolate bark is addictive. The little pieces just never seem to quite satisfy my cravings but you might have more will power than me!

White Chocolate Date Bark
Ingredients
- 12 medjool dates
- 1/2 cup any nuts, cashews, almonds, or walnuts, chopped
- 1/2 cup dried apricots, chopped
- 1/4 cup cashew (or any other nut or seed) butter
- 1/4 cup pumpkin, hemp or sunflower seeds
- 1/4 cup desiccated coconut
Chocolate Drizzle
- 1 cup white chocolate chips
- 1 tablespoon coconut oil
- Flaky salt - optional
Instructions
- Slice 12 pitted medjool dates in half, remove the pits and place them side-by-side, in four rows of six date halves, on a sheet of parchment paper.Cover with a second sheet of parchment paper and roll them out to about ¼ inch thickness using a rolling pin. You want them touching so when frozen they form a strong base for the toppings to go on top.Spread the cashew butter on top of the smashed date halves with the back of a spoon. Then roughly chop the dried apricots and sprinkle them on the cashew butter layer. Sprinkle the chopped nuts, seeds and coconut on top too.Melt the chocolate drizzle topping next.
Chocolate Drizzle
- Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Pour the melted white chocolate over the bark and gently spread with a spatula or the back of a spoon. Be sure to cover all the apricots, nuts, and the date layer.Sprinkle flaky salt if desired, then transfer the bark and the parchment to a baking sheet and place in the fridge for 30 minutes to set. Or, you can place the bark in the freezer for about 5-10 minutes until the chocolate sets. Then either break apart or cut the bark into 10 pieces or more smaller ones. Store in the fridge for up to 1 week or freezer for up to 3 months.
