I love a recipe like this. It’s lower in sugar, has protein from the Greek yogurt and it is the kind that stays good in the freezer for 2 months or so. Granted it never lasts long here. Here’s why you need my vanilla yogurt clusters in your life:

No bake. There is no oven required for this recipe which is always a win/win!

Balanced snack. I always recommend picking at least 2 food groups when building a balanced snack, and these chocolate covered vanilla yogurt treats feature protein and healthy fats from the cashew butter.

Only 10 minutes of prep. It doesn’t get quicker than this!

Additional toppings: Sprinkle shredded coconut, seeds, crushed nuts, or even a dusting of cocoa powder over the chocolate coating for added texture and flavor. For a burst of intense flavor, try dusting the clusters with freeze-dried fruit powder.

Custom Shapes: Instead of forming the bites into round disc shapes, use a silicone mold or even an ice tray to create fun and unique shapes with this quick dessert.

These delicious vanilla clusters straight from the freezer are the perfect summer treat. They are a healthy dessert option that your whole family will love!

Servings 10

Ingredients

  • 1 cup thick Greek-style yogurt, plain or vanilla
  • 1/3 cup dates, pitted, chopped
  • 1/4 cup protein or collagen peptides powder, plain or vanilla
  • 1/4 cup peanuts, chopped
  • 2 tablespoons cashew or almond butter
  • 1 teaspoon vanilla extract

Chocolate Coating

  • 1 cup chocolate chips
  • 1 tablespoon coconut oil
  • Flaky salt (optional)

Instructions

  • In a bowl, mix yogurt, dates, protein powder, peanuts, cashew butter and vanilla extract until well combined.
Portion out 10-12 small circles of the yogurt mixture onto a parchment paper-lined baking sheet. Smooth each one with the back of a spoon into thin circle/disc shapes about ½ inch thick.
Place in the freezer and freeze for about 1 to 2 hours or until firm.

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
Working quickly, using two forks, dip one cluster at a time into the bowl of melted chocolate until it is fully coated. Lift from the bowl of chocolate and let any excess drip off, then place it onto a tray lined with baking paper. Repeat with the remaining bites.
Or hold each one with a fork over the melted chocolate and spoon it over letting the excess drip back into the bowl.
Return to the baking sheet or plate and top with a sprinkle of chopped peanuts.
Place the chocolate covered clusters back in the freezer until the chocolate has hardened, before moving them to an air-tight container for long term storage.
These need to be stored in the freezer, however I recommend letting them thaw at room temp for 5 minutes or so before enjoying for the creamiest consistency and to avoid that icy texture.
