Vanilla Yogurt Protein Clusters

Frozen yogurt desserts like these Vanilla Yogurt Protein Clusters are all over my social media feeds and I am so here for it! The perfect sweet treat! These frozen little bites are packed with protein and creamy cashew butter with a delicious chocolate coating. An easy healthy dessert or snack.

Ingredients

  • 1 cup thick Greek-style yogurt, plain or vanilla
  • 1/3 cup dates, pitted, chopped
  • 1/4 cup protein or collagen peptides powder, plain or vanilla
  • 1/4 cup peanuts, chopped
  • 2 tablespoons cashew or almond butter
  • 1 teaspoon vanilla extract

Chocolate Coating

  • 1 cup chocolate chips
  • 1 tablespoon coconut oil
  • Flaky salt (optional)

Instructions

  • In a bowl, mix yogurt, dates, protein powder, peanuts, cashew butter and vanilla extract until well combined.
    Portion out 10-12 small circles of the yogurt mixture onto a parchment paper-lined baking sheet. Smooth each one with the back of a spoon into thin circle/disc shapes about ½ inch thick.
    Place in the freezer and freeze for about 1 to 2 hours or until firm.

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Working quickly, using two forks, dip one cluster at a time into the bowl of melted chocolate until it is fully coated. Lift from the bowl of chocolate and let any excess drip off, then place it onto a tray lined with baking paper. Repeat with the remaining bites.
    Or hold each one with a fork over the melted chocolate and spoon it over letting the excess drip back into the bowl.
    Return to the baking sheet or plate and top with a sprinkle of chopped peanuts.
    Place the chocolate covered clusters back in the freezer until the chocolate has hardened, before moving them to an air-tight container for long term storage.
    These need to be stored in the freezer, however I recommend letting them thaw at room temp for 5 minutes or so before enjoying for the creamiest consistency and to avoid that icy texture.
