Ingredients
1cupthick Greek-style yogurt, plain or vanilla
1/3cupdates, pitted, chopped
1/4cupprotein or collagen peptides powder, plain or vanilla
1/4cuppeanuts, chopped
2tablespoonscashew or almond butter
1teaspoonvanilla extract
Chocolate Coating
1cupchocolate chips
1tablespooncoconut oil
Flaky salt (optional)
Instructions
In a bowl, mix yogurt, dates, protein powder, peanuts, cashew butter and vanilla extract until well combined. Portion out 10-12 small circles of the yogurt mixture onto a parchment paper-lined baking sheet. Smooth each one with the back of a spoon into thin circle/disc shapes about ½ inch thick.Place in the freezer and freeze for about 1 to 2 hours or until firm.
Chocolate Coating
Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Working quickly, using two forks, dip one cluster at a time into the bowl of melted chocolate until it is fully coated. Lift from the bowl of chocolate and let any excess drip off, then place it onto a tray lined with baking paper. Repeat with the remaining bites.Or hold each one with a fork over the melted chocolate and spoon it over letting the excess drip back into the bowl. Return to the baking sheet or plate and top with a sprinkle of chopped peanuts.Place the chocolate covered clusters back in the freezer until the chocolate has hardened, before moving them to an air-tight container for long term storage.These need to be stored in the freezer, however I recommend letting them thaw at room temp for 5 minutes or so before enjoying for the creamiest consistency and to avoid that icy texture.
