Vanilla Frozen Yogurt Bites

Creamy frozen yogurt bites coated in chocolate are fun to make, delicious to eat, and full of simple and healthy ingredients, and pretty too.
Protein packed, no-bake, and perfect to stash in your freezer to grab whenever the craving for a special 'something' hits.
Whether you are looking for an easy, any time sweet snack, or a delicious dessert, these fro-yo bites are the answer. All you need are a handful of ingredients to create them: yogurt, almond flour, honey, peanut butter and vanilla extract.
And of course some chocolate to melt and coat these bad boys. You can use dark or milk chocolate, white chocolate or a mix if you like.
They come together in only 10 minutes - just make sure to give them plenty of time to chill in the freezer so that they set completely. Make them the night before, then enjoy the easiest snack the next day.
I prefer to use plain yogurt - with honey and vanilla for flavor and sweetness - instead of a pre-flavored yogurt to control the sweetness. But flavoured yogurts add flavour and colour if you prefer them.

This is how you turn yogurt into a finger food. Frozen yogurt bites are a healthy and delicious snack idea that can be made in just a few minutes using yogurt as the base. You can then add some optional mix ins or toppings like fresh fruit, mini chocolate chips, or colorful sprinkles.

Ingredients

  • 1 cup plain or vanilla Greek yogurt
  • 3 tablespoons almond flour
  • 3 tablespoons honey or maple yrup
  • 3 tablespoons peanut butter
  • 1/4 cup mini chocolate chips
  • 1 teaspoon vanilla extract

Chocolate Coating

  • 1 cup chocolate chips
  • 1 tablespoon coconut oil

Instructions

  • Mix together the yogurt, almond flour, honey, peanut butter and vanilla in a bowl. Stir until smooth. Taste and adjust sweetness.
    Fold in chocolate chip mix-ins.
    Pour the mixture into an ice cube tray, filling about ⅔ full. The tray does not have to be coated first.
    Freeze for at least 2 hours or until cubes can be removed.

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Remove the bites and after checking they are firm and set, pop out of the ice cube tray.
    Dip each cube by lowering it into the melted chocolate quickly on a fork. Allow excess to drip off and line cubes on a rack or parchment paper.
    Store in freezer and let thaw for 15 minutes before eating so the inside is nice and creamy.
