This simple pudding is made from chia seeds – the perfect breakfast, snack or healthy dessert. A delicious sweet treat made using simple ingredients and filled with essential fatty acids, protein, fibre and antioxidants.
Chia seeds are used to thicken the sweetened mixture to create a pudding-like texture. Creamy, perfectly sweet and packing over 20 grams of protein per serving. Its thick so it sticks with you for a while and keeps you feeling full and satisfied.
This recipe is healthy and indulgent enough to enjoy it for breakfast, dessert, and any time in between! Antioxidant rich chia seeds are softened to pudding consistency with cashew or coconut milk and honey. For a delicious treat!
Store bought puddings are usually loaded with all sorts of funky ingredients, so making it from scratch at home with this recipe is a much healthier option.
I love serving this with whipped coconut cream (recipe below in notes) for a healthy dessert. But you can also top it with fresh fruit and a drizzle of nut butter for a simple post workout snack or afternoon snack.

Easy to customize. My recipe is a blank slate for you to add various toppings, mix-ins, and more. Feel free to add mix-ins. Nothing beats some chopped nuts, chopped fresh fruit, coconut flakes, healthy granola or even some nut butter.
It’s a great make-ahead breakfast that’s packed with protein, fiber and Omega-3 fatty acids and an easy way to up your daily protein intake in a totally enjoyable way. I often prep 4 or more servings on the weekend, so I have breakfast sorted for the week ahead.
Super filling. The chia seeds pack in tons of fiber, omega-3 fatty acids, which help reduce inflammation and have been linked to a lower risk of chronic diseases. They are a good source of antioxidants, plant-based protein, fiber, calcium, and vitamins.
Chia seeds don’t taste like much, as they take on the flavors of whatever they are mixed with. The ratio of seeds to liquid is the most important part of making chia pudding. I think it turns out best when you use around ¼ cup of chia with a cup of liquid.

Vanilla Chia Seed Pudding
Ingredients
- 3/4 cup coconut (or your choice) milk
- 1 scoop protein or collagen powder
- 2 tablespoons chia seeds
- 1 tablespoon honey or maple syrup
- 1 teaspoon vanilla extract
Toppings
- Dollop of whipped coconut cream – recipe below in notes
- Fresh fruit or berries
- Coconut flakes
- Chopped nuts
- Granola
Instructions
- Add the coconut milk, protein powder, chia seeds, honey and vanilla to a medium sized bowl and whisk to combine. Let stand (stirring occasionally) for 15-30 minutes. Cover your bowl or jar, and let the pudding rest in the refrigerator overnight, or at least 4 hours.When you are ready to eat your pudding, take from refrigerator and give it a good stir. Scoop it into your serving bowl or dish and serve topped with your choice of toppings.
