These super easy Thin Mint cookies taste every bit as good as the originals, and you can make a dozen quicker than you can say Girl Scout cookie! They have a rich chocolate flavor, crisp and crunchy texture, and the perfect amount of peppermint in each bite. Dare I say they are even better than the real deal!
If you are someone who is a thin mint fan but would like some nutritious elements and protein in your desserts, then look no further because I’ve got the perfect solution: fudgy thin mint almond butter protein cups. They are made with less than ten ingredients and don’t require any baking!
For this version, we are skipping all of those extra ingredients like white sugar, palm oil and artificial flavoring and making them with simple ingredients to create a healthier version!
This twist on the classic girl scout cookie combines the familiar flavors of chocolate and mint with the added benefits of protein. I love that they have the same taste, smell, and crunch of traditional thin mints but are made with whole ingredients. They are low sugar, don’t require baking, and freeze perfectly so you always have a treat ready for when that sweet tooth kicks in!
They have to be my personal favorite nut butter cup, ever. They are just so minty and chocolatey and perfect in every way.
Now let’s talk about the taste and texture. These cookies are fudgy, rich, and bursting with chocolatey goodness! The addition of peppermint extract gives them a refreshing minty flavor that perfectly complements the chocolate. They are soft yet chewy, with a satisfyingly dense texture that will leave you reaching for seconds.
To enhance the protein content and create a more substantial treat, I opted to make these cookies larger than the classic thin mint. By shaping them into larger, thicker rounds, each cookie packs a satisfying punch of protein, making it an ideal post-workout snack or a quick breakfast option on busy mornings 🙂
However, for those craving the traditional thin and crispy texture of the classic cookies, fear not! These versatile treats can easily be made smaller and thinner, resembling their girl scout inspiration.
These copycat Girl Scout Thin Mints taste incredibly close to the real thing and take all of 15 minutes to make! Sweet, minty, and light, they are a perfect sweet treat to keep in the freezer for a quick snack or after dinner dessert.
