Thin Mint Almond Butter Protein Cups

Ingredients

  • 2/3 cup almond (or any other nut or seed) butter
  • 1/2 cup almond flour
  • 1/4 cup coconut oil, melted
  • 1/4 cup cocoa powder
  • 1/4 cup protein or collagen peptides powder
  • 1/4 cup honey or maple syrup
  • 1/4 teaspoon peppermint extract

Toppings

  • 1/4 cup mini chocolate chips
  • Flaky sea salt

Instructions

  • First, line a12-hole muffin tin with nonstick liners. Or use a silicon muffin pan. Set aside.
    Place all ingredients except for salt and chocolate chips into a medium-sized bowl. Mix well. If the batter is too thick to mix, add more melted coconut oil.
    The batter should be similar to drippy nut butter.
    Scoop a heaping tablespoon of batter into each muffin liner. Repeat until you have evenly distributed it into 12 liners.
    Sprinkle on some sea salt and mini chocolate chips.
    Place in freezer for at least 1 hour or until firm.
    Once frozen, you can transfer them into an airtight container or plastic bag. Store in the freezer for up to 3 months. When you are ready to eat one (or two), let them thaw briefly on the counter for a few minutes.
