Tahini Date Freezer Cups
These tahini date freezer cups make a lovely snack or a healthier dessert to enjoy after dinner (or any time of the day for that matter!) Best of all is you only need 5 ingredients to make them and no baking!Dates and tahini go so well together they truly are the best combination EVER - a match made in heaven.Every time I post a recipe that includes tahini I still get asked the question ‘what is tahini?’. It surprises me because it seems to me that tahini is now everywhere. It is the Middle Eastern equivalent to peanut, cashew or almond butter, made by blending sesame seeds into a paste. Like nut butters, it has a nutty flavour with a slight bitter aftertaste (the kind of bitterness you would find in dark chocolate or coffee). It’s a fabulous thing!So many people on social media use it in both sweet and savoury recipes. It’s become somewhat of a trendy ingredient. That part doesn’t surprise me at all – I have been singing its praises for years. I add it to so many of my recipes – it’s by far one of my all-time favourite food ingredients to use, especially in desserts.These delightful treats make a nice snack on warm days when you are craving something cold, but don’t necessarily want ice cream. They take no time at all to defrost, simply take one out whenever you need a little pick-me-up or energy boost.The health benefits of this recipe come mainly from the tahini. These seeds are certainly not small fry when it comes to packing a nutritional punch! Packed with antioxidant minerals such as zinc, copper and manganese - these minerals work together to gently detox our bodies from everyday pollutants and oxygen free radicals. Also bursting with B vitamins; B1, B2, B3 and B9 (folate), these are essential to the optimum function of the central nervous system, cognitive and memory prowess and are great mood stabilisers. Ingredients
Tahini Mixture
- 1 cup cashews, soaked 3+ hours and drained
- 1/4 cup tahini, (sesame seed paste)
- 2 tablespoons coconut oil, melted
Date Filling
- 1 cup dates, soaked 30 minutes and drained
- 1/2 cup oats, instant or quick
- 1/4 cup tahini, (sesame seed paste)
- 1/2 teaspoon vanilla extract
Instructions
Tahini Mixture
- Place paper muffin liners in a 12 cavity muffin pan to make 8-10 cups. Place cashews in a food processor and process until broken down and crumbly. Add tahini paste and coconut oil and pulse until combined. Be careful not to over process as its nice to have texture and different sized “bits” in your tahini cups.Scoop out mixture into a small bowl and set aside while you make the date filling.
Date Filling
- Place dates and oats in the food processor and process until broken down and sticky. Add tahini and pulse until well combined.To assemble – Scoop about a tablespoon of the tahini mixture into the bottom of the muffin liners. You want the mixture to come up about a third of the way.Add 1-2 teaspoons of the date mixture. Then cover with another tablespoon of the tahini mixture.Freeze for about an hour, then enjoy!Best kept in the freezer and taken out 10-15 minutes before eating to soften.Store in an air-tight container in the freezer for up to 3 months.
