Tahini Cookie Dough Freezer Fudge
This healthy Tahini Freezer Fudge is made with just a few wholesome ingredients and has a melt-in-your-mouth cookie dough flavor!Who doesn’t like fudge?! You just mix everything a bowl, pour it into a container and set it in the freezer. Tahini (aka liquid gold) is the super star in this recipe. Made from toasted ground hulled sesame seeds. It's smooth, nutty and rich, with a slightly bitter finish and a mouthfeel similar to almond or peanut butter.Tahini contains all the essential amino acids, making it a high quality protein, plus it is rich in lecithin, vitamin E and calcium. Ingredients
- 1 cup tahini (sesame seed butter) well stirred
- 1/4 cup almond or coconut flour
- 1/4 cup coconut oil, melted
- 1/4 cup honey or maple syrup
- 1/4 cup chocolate chips or chopped chocolate bar
- Sprinkle flaky sea salt (optional)
Instructions
- Line a small 5 x 7-inch loaf or baking pan with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting. Or use a silicon pan.Mix together tahini, melted coconut oil, honey in a small bowl. Add half of the chopped chocolate and stir to combine.Pour the mixture into the lined container. Sprinkle over the remaining chocolate, pressing the pieces so that they sink down to be level with the mixture. Sprinkle with flaky sea salt if desired.Chill in the freezer for about 1 hour or until set.Once set, remove from the container and cut into 12 or more smaller pieces depending on your size preference.Store in an airtight container in the freezer or fridge.Note: The fudge should be eaten straight from the freezer or the fridge as it will start to melt at room temperature.
