Strawberry & Yogurt Protein Bars
Ingredients
Base Crust
- 1 cup rolled oats
- 1/2 cup almond flour
- 1/2 cup desiccated coconut
- 3 tablespoons coconut oil, melted
- 3 tablespoons maple syrup or honey
Strawberry Yogurt Layer
- 1 1/2 cups thick Greek-style yogurt, plain or unflavoured
- 1 scoop vanilla protein powder
- 1 cup strawberries (fresh or frozen), blended a little
- 1-2 tablespoons maple syrup or honey (to taste)
- 1 teaspoon vanilla extract
Instructions
- Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.Mix crust ingredients until combined. Press into the base of the pan and smooth the top.
Strawberry Yogurt Layer
- In a bowl, whisk yogurt, protein powder, blended strawberries, sweetener, and vanilla until smooth.Pour over the crust and smooth the top.Freeze for 3-4 hours, or until firm.Slice into 8-10 bars or more smaller squares;Store in an airtight container in the fridge for up to 1 week or freezer for up to 3 months.
