Strawberry & Yogurt Protein Bars

These no bake strawberry and yogurt protein bars combine a chewy oaty crust with a creamy strawberry yogurt topping. The goal with these bars was to create an easy-to-make, “grab-and- go” bar that is protein-rich and provides adequate fuel for before or after a workout, or as a snack or dessert. 🍓🤍

Ingredients

Base Crust

  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/2 cup desiccated coconut
  • 3 tablespoons coconut oil, melted
  • 3 tablespoons maple syrup or honey

Strawberry Yogurt Layer 

  • 1 1/2 cups thick Greek-style yogurt, plain or unflavoured
  • 1 scoop vanilla protein powder
  • 1 cup strawberries (fresh or frozen), blended a little
  • 1-2 tablespoons maple syrup or honey (to taste)
  • 1 teaspoon vanilla extract

Instructions

  • Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    Mix crust ingredients until combined. Press into the base of the pan and smooth the top.

Strawberry Yogurt Layer

  • In a bowl, whisk yogurt, protein powder, blended strawberries, sweetener, and vanilla until smooth.
    Pour over the crust and smooth the top.
    Freeze for 3-4 hours, or until firm.
    Slice into 8-10 bars or more smaller squares;
    Store in an airtight container in the fridge for up to 1 week or freezer for up to 3 months.
