Ingredients
- 2 cups cottage cheese, full fat or double cream (4% – 6% milk fat)
- 2 cups strawberries, fresh or frozen, chopped
- 1 cup almonds, walnuts or cashews, chopped
- 1/4 cup honey or maple syrup
- 2 scoops protein or collagen powder
Instructions
- Add the cottage cheese, 1/2 the chopped strawberries, honey and protein powder to a food processor and process until smooth and creamy.Pour the blended cottage cheese into a freezer safe container. Layer with the chopped nuts and remaining chopped strawberries. Place the container in the freezer to set. It will take about 2-4 hours to freeze completely.Once frozen, remove the ice cream from the freezer and let sit at room temperature for 10-20 minutes to thaw slightly. If you don’t freeze as long/completely you could probably just scoop and serve right away.Add any toppings or mix-ins if desired, then serve.
