Its my favorite healthy ice cream because it’s quick and easy to prepare, with only three ingredients required.You simply blitz pieces of frozen fruit in a food processor and the end result is a whole-food ice cream that is rich, creamy, and luscious enough for a special occasion (birthday party, anyone?) yet light and easy enough for an any time indulgence. You don’t need one of those special ice cream churning machines, you simply use frozen strawberries, a splash of milk and some flavourings – that’s it!It sounds too good to be true doesn’t it? Ice-cream just out of fruit – yeah right! About this little concoction, I cannot hold back. It IS amazing. You will need to keep going back and trying it and saying – that can’t be right. It tastes like ice-cream and it is so damn good! This is definitely one for the recipe bible. You will be in awe of the creamy, fruitful deliciousness before your spoon even begins to melt into the bowl.You can satisfy an ice cream craving guilt-free with this “nice cream“! Seems so simple, that it feels like you are cheating a bit…but to be honest – it’s delectable stuff. And let’s face it, why make it complicated when something this simple can taste insanely delightful!Once you start making nice creams, you will stop buying store bought ice creams, the creaminess it has is nothing less than an ice cream and the plus point is, it is absolutely healthy!

Ingredients
- 2 cups strawberries, frozen
- 1 13.5 oz can coconut cream, full fat (solid part only) *see note below
- Splash of coconut water left over from coconut cream can
- 2 tablespoons honey or maple syrup
- 1 lemon, juice and zest
Toppings
- Fresh strawberries
- Whipped coconut cream – recipe below in notes
Instructions
- Note: Place the can of coconut cream in the fridge or freezer for at least 1-2 hours before making this nice cream to allow coconut cream to separate.Open chilled can and scoop out the cream that has separated and set hard on the top. Save the remaining coconut water as we will be needing it for the liquid in the recipe.Place strawberries, hardened coconut cream, honey, lemon juice and zest along with a splash of the coconut water left over in the can of coconut cream to loosen the mixture. The less the better as the nice cream will be thicker.So start with a splash and add more if needed to get things moving. Process until smooth and creamyServe immediately or store in an airtight container in the freezer for up to one month.
