They are a very popular craze for a reason and they are here to stay!You might have even seen them yourself as they are trending ALL over Facebook and social media, so you may be wondering if there are any recipes for them here on this site.It turns out that I have actually been a fan of the concept since long before it became popular on TikTok or Instagram and there are many recipes on this blog based on this ‘healthy fat’ concept.I have been making these types of sweet treats for years. The original recipe has evolved and they are my go-to whenever I want something sweet but don’t want to make a big batch of something I will later regret eating. One of my favorite snacks a few years ago was to simply freeze balls of coconut butter – I called them coconut candy, which I still think sounds like a much more appealing name than fat bomb. Oh well.Low carb, keto, no-bake treats such as fat bombs are typically made with ingredients such as nut/seed butters, coconut cream, coconut butter or oil, cream cheese, dark chocolate, avocado and little to no sugar.They are called fat bombs because they incorporate healthy fats into the keto desserts to keep you satiated between meals. They are easily portion controlled, and the richness of the coconut cream and coconut oil is very satiating to the taste buds.I love these bite-sized fat bombs and I know you will too! But BEWARE: they are crazy addicting! Sweet strawberries and coconut cream make one tasty treat that's perfect for satisfying your sweet tooth cravings!These hold up pretty well outside the fridge. They taste delicious, both cold and at room temperature. I prefer them at room temperature because the coconut pops even more, and they have a delicious fudge-like texture. Oh, and did I mention they are easy to make? Ingredients
- 1 13.5 oz can coconut cream, full fat (solid part only) *see note below
- 1/2 cup cashews, soaked 3+ hours and drained
- 1/2 cup strawberries, hulled
- 2 tablespoons honey or maple syrup
- 2 tablespoons coconut oil, melted
- 1/4 cup desiccated coconut
- 1 teaspoon vanilla extract
Instructions
- Note: Place the can of coconut cream or milk in the fridge or freezer for at least 1-2 hours before making these bars to allow coconut cream to separate.Line an 5 x 7” loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting. Or you can use silicon snack or bar molds of your choice (I use 12silicone muffin cups), or spread it into a glass dish and then cut it into chunks later.Open chilled can and scoop out the cream that has separated and set hardon the top. Save the remaining coconut water to use in a smoothie, drink, or discard.Place cashews into a food processer and process until broken down and crumbly. Add coconut cream, strawberries, honey, coconut oil and vanilla and continue to process until mixture is well combined. Be careful not to over process as its nice to have texture variance and different sized “bits” in your fat bomb candy.Spoon the mixture into your prepared pan or silicon snack or bar molds of your choice. Top with the shredded coconut and press down gently, so it will stick. Freeze for 30-45 minutes or until set. Store leftovers in the fridge, but are best kept in the freezer.
