Date Caramel is so easy to make and so delicious. It tastes of sweet dates with the creamy texture of caramel. So simple, just a handful of ingredients – it still blows my mind that you can create something so delicious with just 3 ingredients in under 15 minutes…

Date caramel is the absolute best thing ever. Dates are known as ‘nature’s candy’ and oh my, they do taste like candy.

This is a delicious refined-sugar free spread to use as a natural sweetener. It tastes decadent and divine but it’s actually super healthy! Fruit I tell you. Fruit. That’s all there is to say about that!

Date caramel is extremely versatile and can be used in a number of different ways. The recipe is so easy, softened dates blitzed together with coconut cream and a splash of vanilla – so simple but, oh my goodness, it’s so good.

Dates are considered super healthy because they are packed with nutrients, including fiber, antioxidants, and anti-inflammatory and anti-tumor plant compounds. In addition, they are low on the glycemic index (don’t spike blood sugar) and support bone and brain health.

If you are overlooking dates – those wrinkly little fruits nestled unassumingly between the raisins and the prunes in your grocery aisle – you are sleeping on an amazing addition to your healthy-food repertoire. Not only are they satisfyingly sweet, dates are full of fiber, vitamins, and minerals that benefit your brain, muscles, metabolism, digestion, and so much more.

They are nothing short of a nutritional powerhouse and a dollop of this wonderful date caramel on pretty much EVERYTHING is such a simple way to make sure you are not missing out on the incredible benefits of this sweet treat of nature.

Once you have tried this easy Date Caramel, you will start enjoying it in so many ways… as a dip for apples, stirred into porridge, overnight oats or thick Greek yogurt, spread on toast with cottage cheese, served with pancakes or ice cream, drizzled on top of smoothies or smoothie bowls or wherever you need a touch of sweetness and a punch of flavour, the possibilities are endless!

Keep it stored in an airtight container in the fridge and it will stay good for up to 7 days! But really if it lasts that long I would be amazed, you will probably find yourself eating it by the spoonful.

So Good Healthy Date Caramel

Easy, 3-ingredient caramel made with creamy puréed dates, coconut cream with a touch of vanilla extract for a healthy alternative to caramel made with sugar, dairy and who knows what unhealthy ingredients are in store bought stuff.  
A versatile, naturally sweetened, raw caramel perfect for adding caramel flavor to a variety of dishes. You do need to keep a jar of this deliciousness in your fridge!

Ingredients

  • 2 cups dates, soaked 30 minutes and drained
  • 1 13.5 oz can coconut cream, full fat (solid part only) *see note below
  • 1 teaspoon vanilla extract

Instructions

  • Place the can of coconut cream in the fridge or freezer for at least 1-2 hours before making these recipe to allow coconut cream to separate.
    Open chilled can and scoop out the cream that has separated and set hard on the top. Save the remaining coconut water to use in a smoothie, drink, or discard. I give it to my dogs and they love it!
    Place dates, hardened coconut cream and vanilla extract in the food processor and process until smooth and creamy.  To me, some bits (or little chunks) of dates are fine but if you want it to be very smooth you will need to continue processing until the desired smoothness is reached. (12-15 minutes).
    If the mixture seems too thick, add a little water, a tablespoon at a time and blend again until the preferred consistency is reached.
    Keep it stored in an airtight container in the fridge and it will stay good for up to 7 days!
