So Good Healthy Date Caramel

Easy, 3-ingredient caramel made with creamy puréed dates, coconut cream with a touch of vanilla extract for a healthy alternative to caramel made with sugar, dairy and who knows what unhealthy ingredients are in store bought stuff.  
A versatile, naturally sweetened, raw caramel perfect for adding caramel flavor to a variety of dishes. You do need to keep a jar of this deliciousness in your fridge!

Ingredients

  • 2 cups dates, soaked 30 minutes and drained
  • 1 13.5 oz can coconut cream, full fat (solid part only) *see note below
  • 1 teaspoon vanilla extract

Instructions

  • Place the can of coconut cream in the fridge or freezer for at least 1-2 hours before making these recipe to allow coconut cream to separate.
    Open chilled can and scoop out the cream that has separated and set hard on the top. Save the remaining coconut water to use in a smoothie, drink, or discard. I give it to my dogs and they love it!
    Place dates, hardened coconut cream and vanilla extract in the food processor and process until smooth and creamy.  To me, some bits (or little chunks) of dates are fine but if you want it to be very smooth you will need to continue processing until the desired smoothness is reached. (12-15 minutes).
    If the mixture seems too thick, add a little water, a tablespoon at a time and blend again until the preferred consistency is reached.
    Keep it stored in an airtight container in the fridge and it will stay good for up to 7 days!
