I just love making sweet and simple bite-sized treats, and these Raspberry Brownie Date Bites are absolutely perfect and especially when they are no bake! The little individual servings mean you can take one or two out of the freezer at the end of the day to satisfy those ‘need a lil something’ cravings.
Chocolate and fruit seems like such a simple combination, but I feel like they mix in the most powerful and delicious way! The depth of flavor in these babies is incredible.
The dates help sweeten up this recipe, along with the brownie portion, of course and the raspberry jam is quite tart because it’s unsweetened, but that most definitely helps balance out the sweetness.
For the raspberry jam, you absolutely can add honey or maple syrup to sweeten up the otherwise tart flavor. arrowroot powder helps thicken up the jam while giving it a beautiful glossy finish.
I use frozen raspberries to make the homemade jam, but you can use fresh as well! I just happen to always have frozen on hand and they are typically cheaper. You can also use any other fruit instead of raspberries. I think cherries, blueberries or strawberries would be fantastic, too! 🙂

Raspberry Brownie Date Bites
Ingredients
Raspberry Jam
- 3 cups frozen raspberries
- 1 cup water
- 2 tablespoons chia seeds
- 1 tablespoon arrowroot powder
Date Layer
- 10 large medjool dates
Brownie Layer
- 1 cup oat or almond flour
- 1/2 cup cocoa powder
- 1/4 cup honey or maple syrup
- 1/2 cup peanut (or any other nut or seed) butter
- 1 teaspoon vanilla extract
Chocolate Coating
- 1 cup chocolate chips
- 1 tablespoon coconut oil
Instructions
Raspberry Jam
- Place the raspberries and half the water in a medium pot and bring to the boil over medium heat. Cook for 6-8 minutes, or until the jam has thickened stirring periodically. Once thickened, mix the arrowroot powder with the remaining water and stir in.Bring back to the boil and cook for 1-2 minutes, then remove from heat. Stir in chia seeds and let the mixture cool. It will thicken further as it cools.
Brownie Layer
- Mix the brownie layer ingredients in a small bowl and roll them into 10 balls or add to silicone ice cube molds to make little cubes. Freeze for 30 minutes, then add them to the top of 10 flattened out medjool dates.Scoop a spoonful of raspberry jam on top of the brownie layer.Place in the freezer for 1 hour to set. Once frozen and set, melt the chocolate.
Chocolate Coating
- Place chocolate chips and coconut oil in small dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Remove the bites and after checking they are firm and set, dunk each one in the melted chocolate using one or two forks to turn and coat each one in the chocolate. Or you can use a fork underneath to hold each one over the top of the bowl while you spoon over the melted chocolate letting the excess drip back into the bowl.Place in the fridge for 20 minutes or until the chocolate hardens before serving. Store in the fridge in an airtight container for up to 1 week or freezer for up to 3 months.
