Quick Almond Energy Balls

Looking for a delicious snack that is ready in under 10 minutes? These yummy energy balls are so easy to make and are a healthy treat for the entire family.
An energy ball is a raw, no-bake snack made with plant-based ingredients high in fiber, protein and no refined sugar. There are plenty of different energy ball recipes, but most use oats as a source of fiber and protein.
Also, they are always sweetened with unrefined sugar and things like dates, honey or maple syrup and contain healthy fats and extra protein from protein powder, nut butter, seeds, or nuts.
You can make these in just minutes. They are low in carbs, high in healthy fats, and packed with protein, making them perfect for a quick snack or post-workout meal.
Or… you know those afternoon sweets cravings? And that after dinner need for a little something to snack on? I’ve definitely been there. And all I want to do is reach for a cookie. But we don’t want to eat cookies every day! (Well, we might want to…but we won’t.) Because we have healthy eating goals! So instead, let’s make a batch of these gorgeous little energy bites!

Energy balls are one of my FAVORITE things to meal prep for a healthy snack. They are cheaper than buying store bars and better for you because you can control the ingredients,but they look and taste so decadent. Oh my! What a dreamy treat.

Ingredients

  • 1/2 cup almond flour
  • 1/2 cup oats, instant or quick
  • 1/4 cup almond (or any other nut) butter
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • Optional: 1/4 cup protein or collagen powder, 1/4 cup chocolate chips, or 1 tablespoon hemp or chia seeds for extra protein and texture 

Optional Toppings

  • Chopped nuts
  • Dried fruit
  • Hemp or chia seeds
  • Drizzle nut butter

Instructions

  • Add all ingredients to a bowl and mix until well combined into a sticky dough.
    If the mixture is too dry, add a little more coconut oil or milk until the consistency is just right for rolling into balls.
    Using a tablespoon and your hands, form the mixture into 12 or more balls depending on your size preference about 1 inch in diameter.
    Top with your chosen toppings pressing them gently into the ball so they stay put when eating. Place the energy balls on a plate or tray lined with parchment paper. Chill in the refrigerator for at least 30 minutes to set.
    Storage: Store in an airtight container in the refrigerator for up to a week or in the freezer for up to a month.
    Tips: Flavor variations: Add cocoa powder for a chocolatey version, or add a few drops of peppermint extract for a mint-chocolate flavor.
