Pumpkin Frozen Yogurt Bites

Pumpkin frozen yogurt bites are the perfect high protein snack. These bites have a hard chocolate outer shell and are filled with a creamy high-protein pumpkin yogurt. The perfect healthy, sweet indulgence, there’s a reason why these yogurt bites have been going viral on social media (like ALL over TikTok and Instagram).
Whether you need a refreshing snack or are craving ice cream, these will hit the spot! Chocolate covered bites taste like creamy pumpkin frozen yogurt covered in a chocolate magic shell.
They are a quick and healthy snack that are sure to satisfy any sweet tooth. They can be made with Greek or coconut yogurt and the pumpkin pairs so nicely with the yogurt and dark chocolate coating, Very easy to make, simply mixed together in one bowl in just a few minutes!
I can devour these in just a few days! I like to keep them stored in the fridge though so the center is always creamy, gooey and just oh so delicious. BUT you can also freeze them but there are quite hard straight from the freezer. Best to let them thaw first though so the outside is crunchy and the inside smooth and creamy.
Yogurt bites are packed with protein and gut-friendly. They can be made vegan/dairy-free and are gluten free and refined sugar free (paleo friendly).
Greek yogurt is naturally high in protein and pumpkin is a great source of Vitamin A, is naturally high in Vitamin C and adds a lovely healthy twist to these bites.
They are versatile – you can add any mix-in’s you would like! A touch of cinnamon adds a ton of flavor and you can use maple syrup as a sweetener or date or rice syrup. Use any type of chocolate that you would like such as dark chocolate, milk chocolate, or even white chocolate.
Frozen Yogurt Bites are the perfect high protein snack to have stored in your fridge for whenever you just want a ‘lil somethin’.

Ingredients

  • 1 cup plain Greek yogurt
  • 1/2 cup pumpkin puree
  • 1/3 cup almond butter
  • 1/3 cup protein or collagen powder
  • 2 tablespoons honey or maples syrup
  • 1 teaspoon vanilla extract

Chocolate Coating

  • 1 cup chocolate chips
  • 1 tablespoon coconut oil

Instructions

  • In a bowl, add all of the bites ingredients and mix together until well combined.
    Use a cookie scoop or a spoon, add around 8 dollops of the yogurt mixture to a baking sheet that is lined with parchment paper and freeze.
    Note: The yogurt bites must be fully frozen before dipping in the melted chocolate.

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Remove the bites from the freezer and after checking they are fully frozen, remove from parchment paper. Working quickly, drop each bite into the melted chocolate using 1 or 2 forks or a spoon to turn the bites over in the melted chocolate to make sure each one is completely covered.
    Place back on the parchment paper and back into the freezer.
    Note:  Be sure to fully coat the yogurt bites in chocolate to create that outer shell, otherwise the yogurt will seep out once placed in the fridge.
    Serve these Pumpkin Yogurt Bites once the outer shell has fully hardened and enjoy straight out of the fridge.
    You can also freeze these, however the inside will instead be hard and tough to enjoy so let them thaw for 20 minutes before eating.
    Store in the fridge and enjoy within 4-5 days. Or in the freezer and enjoy up to 30 days.
