Protein Nut Fruit & Seed Bars
The perfect healthy chocolate pick me up, packed with good for you ingredients that you can feel good about eating and enjoying. I have created this dreamy recipe for melt-in-your-mouth bars that taste even better than a classic candy bar. It’s a hearty snack and these protein nut, fruit and seed bars also make a great on-the-go breakfast on busy mornings. Nut, fruit and seed bars like these make a great nutritious snack. They are a great source of plant goodness like fibre and antioxidants. I always try to add protein powder to my snacks too, to make them more balanced. It’s also an easy way to make sure I’m getting enough protein into my diet. The added protein bumps up your daily protein intake with each serving containing 9g of protein! Not bad for something that tastes like a dessert It’s a fact, everything is better with chocolate. There’s not much that I don’t like…. if it’s covered in chocolate. Take things I won’t eat normally, give them a hiding place in chocolate, and I can devour them.Like avocados. They are much better in chocolate things than they are plain.Or raisins and peanuts. I can handle a few of them by themselves, but covering them in chocolate makes them sooooo delicious.This healthy chocolate bar snack is such a simple concept. Take some dark chocolate, coconut oil and honey to make up the base and then pack it full of nuts, dried fruit and seeds. A great treat yourself delicious dessert, or mid-day pick me up. Or if you are my husband or son, we are going to sneak into the fridge and eat them all before wife/mom notices. Just saying!The chocolate is dark, and the saltiness of the nuts and tartness/sweetness of the dried fruit is a delicious paring! And not only is it delicious, it’s highly customizable. A wonderful pantry-friendly recipe that combines whole foods to make an appetizing breakfast or snack. They are easy to prepare and customize, so you can use whatever you have in your pantry. The whole family will love these delicious bars, which are great for breakfast or a pick-me-up snack.Its great that you control what goes into this recipe. There is no added sugar or other “filler” ingredients similar to store-bought options. You can choose the dried fruit, nuts and seeds to fit your taste and what you have in your pantry. Mine are different every single time I make them as I use all sorts of ingredients and they all work perfectly with endless flavour and nutrient combinations!

Ingredients
- 2 cups nuts, dried fruit and seed mix
- 1 10 oz bag dark bittersweet chocolate chips (or chips of choice)
- 1/2 cup protein or collagen powder (optional)
- 1 tablespoon coconut oil
- 1-2 tablespoons honey or maple syrup
Instructions
- Line a 8 x 4-inch loaf pan or similar sized dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting. Or us a silicone loaf pan.Set aside.Place chocolate chips and coconut oil into a glass bowl and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.When the chocolate is easily stirred and smooth, add honey and protein powder and stir to blend evenly. Pour into prepared pan and spread chocolate evenly with a spatula or back of a spoon.Gently sprinkle nut, fruit and seed mix over chocolate then push it into the chocolate to distribute the nuts and fruit deeper into the bars. You can use your fingers to gently push the mix into the chocolate too.Place pan into the freezer for 15 minutes or the fridge for 2 or more hours to set.Once set cut into bars or squares of your preferred size. Store covered in the fridge for up to 2 weeks. You can also store in the freezer but these bars will be softer in the fridge.
