I love to DIY these treats for a nutritious and delicious snack or dessert right from my freezer. It’s a great way to satisfy a sweet tooth while fueling your body with better-for-you ingredients.
They have lots of delicious peanut butter flavor and a creamy, crunchy consistency like some of my favorite candies but are higher in protein and lower in sugar for a healthy dessert I feel good about eating.
I try to always have a batch on hand to enjoy as an afternoon pick-me-up or after-dinner treat. The beauty of this recipe is that you can add as much (or as little) sweetener as you like, use different nuts or cereal in the base or make your own jelly or jam without the loads of sugar.
You can also use any flavour yogurt that you like to add sweetness and flavour to make it in your way and taste. You can also meal prep these babies for the week and enjoy frozen for a convenient snack or dessert. They are exceptionally yummy; kids love them, and adults love them as well. There are four distinct layers to this bar and it’s really hard for me to pick a favorite. The base is peanut butter nuttiness. Then there’s the jelly layer. I make my own sugar free chia jam using frozen fruit and the recipe is below in notes.
The creamy peanut butter, Greek yogurt is next and this is the layer that makes it a fun treat. It’s basically like eating ice cream in the middle of your snack since these bars are frozen. I used plain, super thick, full fat Greek yogurt for these bars as it makes them so creamy and yummy.
I also use peanut butter powder which give a subtle peanut flavor, combined with vanilla and honey, this layer is pure decadence. You can use peanut butter if you do not have the peanut butter powder but it is well worth getting if you can or even order it online.

Powdered Peanut Butter is high in protein and has 80% less fat than traditional peanut butter. It’s made by slow roasting and pressing peanuts to remove most of the fat and oil and the result is a lower calorie product that has a full roasted peanut butter flavour with about twice as much protein per gram than its traditional counterpart.

I hate to make this comparison, but if you have ever had a frozen Snickers ice cream bar and can remember the taste of the ice cream part, that’s what these frozen yogurt bars taste like.

Peanut Butter and Jelly Frozen Yogurt Bars
Ingredients
Base Crust
- 1 cup peanuts, raw, unroasted, unsalted
- 1 cup dates, soaked 30 minutes and drained
- 1/2 cup rolled oats
- 1/2 cup desiccated coconut
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
Jelly Layer
- 1 cup strawberry jelly or jam - store bought or make your own sugar free – Chia Jam, recipe below in notes
Yogurt Layer
- 1 1/2 cups thick, plain, full fat, Greek yogurt
- 1/2 cup peanut butter, or powdered peanut butter
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
Chocolate Drizzle
- 1/2 cup chocolate chips
- 1 teaspoon coconut oil
Instructions
Base Crust
- If you are going to make your own jelly or jam do so first so its ready when you need it to make these bars. Easy recipe below in notes.Line a 8 x 8-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.Combine the peanuts, dates, oats, coconut, coconut oil and vanilla in a food processor. Process until mixture is sticky and well combined. Be careful not to over process as its nice to have texture variance and different sized “bits” in your base crust. Press the base mixture into the bottom of your pan or dish evenly. Place in freezer while you prepare the next layer.
Jelly Layer
- Spread the jelly on top of the base layer evenly and put back in the freezer for about 30 minutes or until firm.
Yogurt Layer
- Combine the yogurt, peanut butter, honey and vanilla in a bowl and mix until well combined. Spread on top of the jelly layer evenly with a spatula or back of a spoon and return to the freezer until frozen solid, at least 2 hours or up to overnight.
Chocolate Drizzle
- Place chocolate chips and coconut oil in a small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot off boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Remove bars from freezer and drizzle the melted chocolate over the top of the in the baking dish with a spoon or piping bag. Return to freezer for 5 minutes to set.Remove the bars from the baking dish using the parchment paper handles and cut into 12 bars or more smaller squares. Serve immediately or keep frozen in an airtight bag or freezer safe container in the freezer for up to 3 months.
