These peanut butter and jelly frozen yogurt bars have a chewy nutty bar base and layers of sweet fruit jelly, creamy peanut butter infused yogurt and a chocolate drizzle topping.

Ingredients
Base Crust
1cuppeanuts, raw, unroasted, unsalted
1cupdates, soaked 30 minutes and drained
1/2cuprolled oats
1/2cupdesiccated coconut
1/4cupcoconut oil, melted
1teaspoonvanilla extract
Jelly Layer
1cupstrawberry jelly or jam - store bought or make your own sugar free – Chia Jam, recipe below in notes
Yogurt Layer
1 1/2cupsthick, plain, full fat, Greek yogurt
1/2cuppeanut butter, or powdered peanut butter
2tablespoonshoney or maple syrup
1teaspoonvanilla extract
Chocolate Drizzle
1/2cupchocolate chips
1teaspooncoconut oil
Instructions
Base Crust
If you are going to make your own jelly or jam do so first so its ready when you need it to make these bars. Easy recipe below in notes.Line a 8 x 8-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.Combine the peanuts, dates, oats, coconut, coconut oil and vanilla in a food processor. Process until mixture is sticky and well combined. Be careful not to over process as its nice to have texture variance and different sized “bits” in your base crust. Press the base mixture into the bottom of your pan or dish evenly. Place in freezer while you prepare the next layer.
Jelly Layer
Spread the jelly on top of the base layer evenly and put back in the freezer for about 30 minutes or until firm.
Yogurt Layer
Combine the yogurt, peanut butter, honey and vanilla in a bowl and mix until well combined. Spread on top of the jelly layer evenly with a spatula or back of a spoon and return to the freezer until frozen solid, at least 2 hours or up to overnight.
Chocolate Drizzle
Place chocolate chips and coconut oil in a small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot off boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Remove bars from freezer and drizzle the melted chocolate over the top of the in the baking dish with a spoon or piping bag. Return to freezer for 5 minutes to set.Remove the bars from the baking dish using the parchment paper handles and cut into 12 bars or more smaller squares. Serve immediately or keep frozen in an airtight bag or freezer safe container in the freezer for up to 3 months.
