Orange Chia Yogurt Bites

They are making them with all sorts of yummy fillings then coating them with magic shell chocolate coating.Greek yogurt is naturally high in protein and orange is naturally high in Vitamin C and adds a lovely healthy twist to these bites. I prefer to use plain yogurt - with honey and vanilla for flavor and sweetness. But you can use a flavored yogurt too.They are versatile– you can add any mix-in’s you would like! A touch of vanilla or cinnamon adds flavor and you can use maple syrup as a sweetener or date or rice syrup. Use any type of chocolate that you would like such as dark chocolate, milk chocolate, or even white chocolate.Chia seeds don’t taste like much, so they take on the flavors of whatever they are mixed with.The ratio of seeds to liquid is the most important part of using chia seeds. I think it turns out best when you use around ¼ cup of chia with a cup of liquid.They are super powerful little seeds and so good for you! Just two tablespoons contain four grams of protein and 11 grams of fiber, plus lots of omega-3s and calcium. When you add them to liquid, they absorb the liquid and form a gel-like consistency.Super filling. The chia seeds pack in tons of fiber, omega-3 fatty acids, which help reduce inflammation and have been linked to a lower risk of chronic diseases. They area good source of antioxidants, plant-based protein, fiber, calcium, and vitamins.I can devour these in just a few days! I like to keep them stored in the fridge though so the center is always creamy, gooey and just oh so delicious. BUT you can also freeze them but there are quite hard straight from the freezer. Ingredients
- 1 cup orange juice
- 1/2 cup Greek yogurt
- 4 tablespoons chia seeds
- 2 tablespoons honey or maple syrup
- 1 orange, peeled and cut into small pieces
- 1 teaspoon orange zest
Chocolate Coating
- 1 cup chocolate chips
- 1 tablespoon coconut oil
Instructions
- In a small bowl add the chia seeds and the orange juice and stir well. Cover bowl and set aside for about 1/2 an hour.Stir again to make sure there are no lumps. Add yogurt, honey, orange pieces and orange zest and mix until well combined.Place spoonfuls into small silicone moulds, any shape or size is fine. Or simply scoop into a small dish that has been lined with parchment paper. Or spoon 10-12 dollops onto a parchment lined tray.Freeze until firm (2-3 hours).
Chocolate Coating
- Place chocolate chips and coconut oil in small dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Unmould the chia/orange bites or cut into 10-12 bars or smaller squares and working quickly dip them into the melted chocolate using two forks to hold them while you dip them into the chocolate.Place them or a rack to set. Cool well to harden and store the Orange Chia bites in the fridge or freezer.If frozen, best to let them thaw first for 15 minutes so the outside is crunchy and the inside smooth and creamy.
