I tend to go for acai, coconut type bowls, BUT, this mint one is SO good and seriously tastes like mint ice cream.

Ingredients

  • 1/2 banana, sliced, frozen
  • 1/4 avocado. flesh
  • 1/2 cup baby spinach, or any other greens
  • 1/4 cup coconut (or any) milk
  • 2 teaspoons tahini or any nut butter
  • 2 dates
  • 1 scoop protein or collagen peptides powder
  • 1/4 teaspoon peppermint extract or a few leaves of fresh mint

Toppings Optional

  • Dollop of whipped coconut cream – recipe below in notes
  • Chopped nuts
  • Fresh or dried fruit
  • Seeds like hemp, chia or sunflower
  • Coconut shreds
  • Chocolate chips or cacao nibs
  • Granola

Instructions

  • Add all ingredients to a high-powered blender and blend on high until smooth and creamy.
    Pour into a bowl and top with your chosen toppings. Enjoy straight away.
