Old fashioned baked recipes always had tons of sugar, carbs and fats. The new modern way is to add protein to each meal or snack making things more balanced and healthy.

Store-bought protein bars lost their charm for me years ago, so I started making my own at home. Since then, I’ve created dozens of flavors, but this mint chocolate version has been a clear favorite. The best part? They come together in minutes and cost a fraction of those expensive store-bought bars. There is something special about making your own protein cars – they are fresh, packed with flavor, and made with simple ingredients you probably already have in your kitchen and NO NASTIES.
After all, who doesn’t love a good protein bar? They are among the most tasty, filling, and convenient healthy snack ideas you can enjoy. If you are looking to make homemade bars, though, then you have probably got an inkling that DIY’ing it has certain advantages.
The main draw with going the homemade route is the infinite customizability. Many protein energy bars on the market aren’t fit for everyone’s dietary needs (gluten free, paleo, vegan, nut-free etc), but when making your own, you can make sure that they are! Store bought protein/energy bars can be expensive. Even the cheaper brands that tend to have more added sugar and other unnecessary ingredients are still a few dollars per bar. Not to mention the bars with more natural ingredients.
When you make your own, it comes out so much cheaper than buying from the store. Whip up a batch and you might never want to spend money on another packaged protein bar ever again. This homemade recipe does not have any nasty preservatives and artificial sweeteners, is packed with healthy fats and clean nutritious ingredients.They are one of my go-to recipes to make so I can have a quick snack to grab on a busy day. They are a great post-workout snack or the perfect snack to curb your sweet tooth.
Feel free to use your favorite protein powder, and the recipe can easily be doubled or tripled if you want to make up a big batch for meal prep.
I make these often, and they are my go-to for a quick protein-rich bar that’s way better than store-bought options. Plus, with white chocolate chips and a naturally green mint layer, these bars look just as good as they taste!

Mint Chocolate Protein Bars
Ingredients
- 1 cup rolled oats
- 1/2 cup dates, soaked 30 minutes and drained
- 1/2 cup tahini (sesame seed paste) or any other nut or seed butter
- 1/2 cup thick Greek-style yogurt, vanilla or unflavoured
- 1/4 cup protein powder or collagen peptides powder
- 2 tablespoons cocoa powder
- 2 tablespoons coconut oil
- 1 teaspoon vanilla extract
- 1/2 teaspoon peppermint extract
- 1/4 cup mini chocolate chips
Chocolate Drizzle Topping
- 1/2 cup white chocolate chips
- 2 teaspoons coconut oil
- Few drops of natural green food colour * see note below
Instructions
- Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.Add the oats to a food processor and pulse a few times until broken down and crumbly. Add dates, tahini, yogurt, protein powder, cocoa, vanilla, peppermint extract and continue to process until well combined and a dough forms.Press the mixture evenly into the lined pan. Sprinkle the mini chocolate chips on top and gently press into the dough. Place in the freezer for 15 minutes to firm up while you melt the chocolate drizzle topping.
Chocolate Drizzle Topping
- Place chocolate chips and coconut oil in small dish and microwave with 15 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Remove the bars from the freezer and lift out of the pan. Cut into desired size. Drizzle melted white chocolate over the top. Return to the fridge or freezer until firm and enjoy!*Natural Green Food Coloring: Be sure to use an oil-based or powder-based food coloring with the melted white chocolate. If you use a water-based food coloring, the white chocolate will seize and become dry and brittle. You can also omit the food coloring all together.
