Mint Chocolate Protein Bars

Made with tahini or almond butter, all you need is 5minutes to turn your fave protein powder into these delicious mint chocolate protein bars for the ultimate on-the-go healthy snack! Great to have between meals or as a pre/post workout snack.

Ingredients

  • 1 cup rolled oats
  • 1/2 cup dates, soaked 30 minutes and drained
  • 1/2 cup tahini (sesame seed paste) or any other nut or seed butter
  • 1/2 cup thick Greek-style yogurt, vanilla or unflavoured
  • 1/4 cup protein powder or collagen peptides powder
  • 2 tablespoons cocoa powder
  • 2 tablespoons coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 1/4 cup mini chocolate chips

Chocolate Drizzle Topping

  • 1/2 cup white chocolate chips
  • 2 teaspoons coconut oil
  • Few drops of natural green food colour * see note below 

Instructions

  • Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    Add the oats to a food processor and pulse a few times until broken down and crumbly.  Add dates, tahini, yogurt, protein powder, cocoa, vanilla, peppermint extract and continue to process until well combined and a dough forms.
    Press the mixture evenly into the lined pan. Sprinkle the mini chocolate chips on top and gently press into the dough. Place in the freezer for 15 minutes to firm up while you melt the chocolate drizzle topping.

Chocolate Drizzle Topping

  • Place chocolate chips and coconut oil in small dish and microwave with 15 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Remove the bars from the freezer and lift out of the pan. Cut into desired size. Drizzle melted white chocolate over the top. Return to the fridge or freezer until firm and enjoy!
    *Natural Green Food Coloring: Be sure to use an oil-based or powder-based food coloring with the melted white chocolate. If you use a water-based food coloring, the white chocolate will seize and become dry and brittle. You can also omit the food coloring all together.
