These Matcha Bars are unique, sophisticated, and sweet. They are also packed with nutritious protein, healthy fats, complex carbs, fiber, and all natural goodness!

So for those of you who would appreciate a bit of background on the latest tea-darling favourite.

Matcha is a type of Japanese green tea that comes in a powder and contains a multitude of health benefits, including powerful antioxidants, vitamin C and fibre. It has a refreshing distinct flavour  and can be found at health food shops, Asian supermarkets and online.

Because the entire leaf is used, matcha contains even more beneficial antioxidants and nutrients than regular green tea. I’ve been using more matcha lately (it’s great in smoothies and lattes) and wanted to try incorporating it into an energy bar.

I know a green protein bar is a weird concept to wrap our heads around, let alone eat…  but you gotta admit, they are pretty fascinating, yes?  Once you think about it, people eat green foods all the time!  Green leaves, fruits and veges so Matcha isn’t so weird after all.

These bars are healthy, fun to make, and easy to eat. They make the perfect snacks to keep on hand for those long busy days.  Or any day at all, really!  😉

I must stress that the flavour of matcha doesn’t suit everyone’s taste, and if this is you, simply omit this all together. It still has that wow factor! But you won’t really taste it in these bars as we have cocoa, coconut and vanilla flavours that mask it somewhat.

As well when we drizzle ’em with chocolate for some extra decadence and you have got an incredibly unique, totally sophisticated, sweet and fudgy no-bake treat that’s secretly packed with protein, healthy fats, complex carbs, fiber, and all natural goodness!

Let’s have a moment of silence to embrace beautiful chocolate drizzle.  A generous drizzling of chocolate can (and will) make anything taste better.  I must admit, I’m not the biggest fan of matcha flavor, but I will GOBBLE. THESE. UP.

There are so many health benefits to green tea and matcha, I love finding new ways to incorporate them into my diet (I’m not a huge tea-drinker…  my heart belongs to coffee).

I love everything about this show-stopping recipe – from the unique matcha flavour which gives these a vibrant touch of colour, to the nutty, chocolate fudge-like filling – all drizzled with sin-free chocolate sauce. I mean, what’s really not to like?

They are a healthy alternative to your common chocolate bar, and as we all know I’m a huge fan of quick and easy, they can be made up in a flash! Make them on a weekend and you have a whole week’s worth of treats for when you get snacky.

These bars have all the good stuff.  Wholesome and natural ingredients that are good for the body.  No need for the high-fructose, corn syrup, artificial flavorings, synthetic food dyes, preservatives or loads of sugar and unhealthy fats.  They are so damn good and will make your taste buds happy as can be.

Matcha Green Tea Fudge Bars

 
Indulge in these delicious Matcha Fudge Bars, a healthy snack that you can whip up in minutes, and they taste like fudge! A wonderfully yummy treat for yourself, or a great gift for a family member or a special someone to enjoy.

Ingredients

  • 1 cup oat flour (oats ground to a flour)
  • 1 cup dates, soaked 30 minutes and drained
  • 1/2 cup almond butter
  • 1/2 cup desiccated coconut
  • 1/2 cup milk of choice, plus more if needed
  • 1/4 cup cocoa powder
  • 2 tablespoons coconut oil, melted
  • 1 tablespoon Matcha powder, plus extra for dusting
  • 1 teaspoons vanilla extract

Chocolate Drizzle

  • 3/4 cup chocolate chips
  • 1 tablespoon coconut oil

Instructions

  • Line a 8 x 8-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting. Set aside.
    Place all ingredients for bars into a food processor and process until well combined into a sticky dough. If the mixture seems a little dry, add more milk a tablespoon at a time until it comes together.
    Mixture should be thick and fudgy, like cookie dough. Taste test and add more cocoa, matcha or vanilla extract if you think it needs it.
    Scoop the mixture into the lined pan and spread out evenly with a spatula or back of a spoon. Place in fridge while you melt the chocolate drizzle.
     

Chocolate Drizzle

  • Place chocolate chips and coconut oil in small dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted, drizzle over the bars. Dust with matcha powder if desired and place in fridge for 10 minutes for the chocolate drizzle to set.
    Lift the mixture out of the pan and slice into 12 bars or more smaller squares.
     Note: You can use any chocolate - white, milk, semi-sweet or dark or a mix for the drizzle.
    To store: Individually wrap the bars in plastic sandwich baggies. Store in the refrigerator for up to1 week or stash them in the freezer or up to 3 months.
