Matcha Energy Bites

These fabulous energy bites are healthy, fun to make, and easy to eat.
They make the perfect snack to keep on hand for those busy work or school days. Or any day at all, really  😉
I know a green snack ball is a weird concept to wrap our heads around, let alone eat… but you gotta admit, they’re pretty fascinating, yes?  Once you think about it, people eat green foods all the time like spinach, kale, granny smith apples and so on.  Matcha ain’t so weird after all.
Drizzle ’em with chocolate for some extra decadence and you have got an incredibly unique, totally sophisticated, sweet no-bake treat that’s secretly packed with protein, healthy fats, complex carbs, fiber,and all natural goodness!
These matcha no bake energy bites make the perfect dessert or snack, or a pre workout or post workout treat. The matcha powder gives a gentle caffeine kick, while the rest of the ingredients provide a nice balance of carbs, protein and healthy fats,as well as vitamins and minerals.
They make for an amazing wholesome plant-based snack to boost your energy level and feature nutrient dense ingredients such as shredded coconut, almond flour and matcha powder.
If you are new to matcha, it is simply dried green tea leaves that are crushed into a very fine powder.
When drinking 'regular' green tea, you have to remove the leaves after steeping compared to matcha tea where the crushed leaves are whisked into water or milk. This explains the exceptionally powerful health benefits from matcha mostly because the antioxidant-rich leaves are fully ingested.
 Consuming matcha green tea on a regular basis has been proven to seriously boost health. It helps lower your blood pressure and even help prevent heart disease. But what's also great on a day-to-day is that it also boosts your metabolism. This can help your mind stay focused and your body energized in such a relaxed way.
Matcha tea is part of a traditional tea ceremony in Japan for centuries, but became more popular in western countries recently mostly for its health benefits. While matcha only contains about half the amount of caffeine found in coffee, it still packs a gentle punch, accompanied with that lovely green tea flavour.
Yep, these no bake energy bites have it all – the healthy carbohydrates and, the protein from almonds, and the healthy fats. The white chocolate drizzle is optional, but – hey – we need all the help we can get on those days where we need a wee boost. Am I right, or am I right?
These Matcha energy bites have all the nice stuff.  Just good and wholesome organic,natural ingredients that are good for the body. No need for the high-fructose corn syrup, artificial flavorings, synthetic food dyes, or preservatives. 
They are so damn good and will make your taste buds happy as can be.

Ingredients

  • 1 cup almonds, or walnuts or a mix
  • 1 cup dates, soaked 30 minutes and drained
  • 1 cup desiccated coconut
  • 1/2 cup protein or collagen powder
  • 1/2 cup almond (or any other nut) butter
  • 1/2 cup almond (or any) milk
  • 1/4 cup honey or maple syrup
  • 1 tablespoon matcha powder

Chocolate Drizzle

  • 1 cup white chocolate chips
  • 2 teaspoons coconut oil

Instructions

  • Place almonds in a food processor and process until broken down and crumbly. Add dates, coconut, protein powder, almond butter, milk, honey and matcha powder and continue to process until well combined.
    Be careful not to over process as its nice to have texture variance and different sized “bits” in your energy balls.
    Then, roll in about 15 balls. I like to use an ice cream scoop so they are all about the same size, but any size is fine.
    Optional - Drizzle with melted white chocolate and return to the freezer until the chocolate has set.
    Chocolate Drizzle
    Place chocolate chips and coconut oil in small dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Using a spoon, drizzle the melted chocolate over the energy balls for a decadent addition.
    Store in the fridge for up to 5 days but they can also be kept in the freezer for up to 3 months. Let them thaw at room temperature before enjoying.
