Mango Macadamia Protein Nice Cream
I’ve been making a lot of protein ice cream lately with a variety of fruit, and usually vanilla protein powder. When I see mangos available in the supermarket I buy some and freeze them to make mango nice cream.Of course, if you don’t have fresh mango to freeze, you can always use a bag of frozen mango from the freezer aisle of your grocery store. That way, you can enjoy this yummy dessert no matter what time of the year it is.After making this mango version though, I realized it is definitely one of my TOP favorite kinds of protein ice cream to make! So, try it and I am sure you will enjoy the refreshing treat and will feel good about sticking to your health goals.In case you are wondering what the heck nice cream is…It’s called ‘nice cream’ rather than ice cream, just to differentiate the two. Nice cream is a super easy, take on traditional ice cream, yet made very differently. You don’t need one of those special ice cream churning machines, you simply use frozen bananas or other fruit, a splash of milk and some flavourings – that’s it!It sounds too good to be true doesn’t it? Ice-cream just out of fruit – yeah right! About this little concoction, I cannot hold back. It IS amazing. You will need to keep going back and trying it and saying – that can’t be right. It tastes like ice-cream and it is so damn good! This is definitely one for the recipe bible. You will be in awe of the creamy, fruitful deliciousness before your spoon even begins to melt into the bowl.You can satisfy an ice cream craving guilt-free with this “nice cream“! Seems so simple, that it feels like you are cheating a bit… but to be honest – it’s delectable stuff. And let’s face it, why make it complicated when something this simple can taste insanely delightful!Once you start making nice creams, you will stop buying store bought ice creams, the creaminess it has is nothing less than any ice cream and the plus point is, it is absolutely healthy! Ingredients
- 1 cup mango chunks, frozen
- 1/4 cup Greek yogurt
- 1/4 cup macadamia nuts
- 1 tablespoon honey or maple syrup
- 1 scoop vanilla protein or collagen powder

- In a food processor or high speed blender, place mango chunks, yogurt, honey and protein powder. Process until smooth and creamy. This will take 1-2 minutes. You may need to stop and scrape down the sides if necessary to keep things moving.Add macadamia nuts and pulse a couple of times to combine.Serve immediately as a soft serve or pack into an airtight container and freeze until ready to serve. Leave out to soften for 15-20 minutes before eating if fully frozen.Storage: Store in an airtight container in the freezer for up to 2 weeks.Some Tips On Making Nice CreamFreeze: Place the container in the freezer and let the ice cream freeze until it reaches your desired consistency. It’s a good idea to give it a gentle stir after the first hour of freezing to ensure an even texture.Serving: When you are ready to serve the nice cream, simply remove it from the freezer and let it sit at room temperature for a few minutes to soften slightly.
