Ingredients

  • 2 bananas, sliced, frozen
  • 2 tablespoons almond milk, plus more as needed
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons almond (or any other nut or seed) butter
  • 1 teaspoon vanilla extract

Magic Shell Topping

  • 1/4 cup chocolate chips
  • 1 teaspoon coconut oil
  • 2 tablespoons crushed nuts, optional

Topping - Optional

  • Dollop of whipped coconut cream - recipe below in notes

Instructions

  • In a food processor or blender, blend the frozen bananas with the nut milk and vanilla, adding more milk as needed, a small dash at a time, until the desired ice cream-like consistency is reached. The less milk you use, the thicker the “nice cream” will be.
    When thoroughly blended, pour the contents into two bowls or jars and smooth out evenly.
    Place in freezer while you melt the magic shell topping.

Magic Shell Topping

  • Place chocolate chips and coconut oil in small dish and microwave at 50% power with 10 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted, pour the chocolate over the nice cream and swirl it around so it makes an even layer.
    Freeze the bowl of nice cream for 5 to 10 minutes, until the chocolate has solidified. Top with nuts (if using) and crack it open with a spoon.
