Macadamia Lemon Fat Bombs

Bright, tangy, coconutty, and slightly sweet. A perfect combination of a satisfying treat without the guilt! Yes, the name for these refreshingly sweet and tart lemon treats are Fat Bombs. With the popularity of the Keto diet, fat bombs have become the ultimate keto candy.
What Are Fat Bombs?
If you know anyone following a keto lifestyle, I can almost guarantee they are whipping up fat bombs on the regular! They are a very popular craze for a reason and they are here to stay!
You might have even seen them yourself as they are trending ALL over Facebook and social media, so you may be wondering if there are any recipes for them here on this site.
It turns out that I have actually been a fan of the concept since long before it became popular on TikTok or Instagram and there are many recipes on this blog based on this ‘healthy fat’ concept.
I have been making these types of sweet treats for years. The original recipe has evolved and they are my go-to whenever I want something sweet but don’t want to make a big batch of something I will later regret eating.
One of my favorite snacks a few years ago was to simply freeze balls of coconut butter – I called them coconut candy, which I still think sounds like a much more appealing name than fat bomb. Oh well.
Low carb, keto, no-bake treats such as fat bombs are typically made with ingredients such as nut/seed butters, coconut cream, coconut butter or oil, cream cheese, dark chocolate, avocado and little to no sugar.
They are called fat bombs because they incorporate healthy fats into the keto desserts to keep you satiated between meals. They are easily portion controlled, and the richness of the coconut cream and coconut oil is very satiating to the taste buds.
I love these bite-sized fat bombs and I know you will too! But BEWARE: they are crazy addicting!
As with any of my recipes, feel free to tailor this recipe to suit your own personal tastes. You can vary the type of citrus you use - orange, lime, tangerine, and even grapefruit are all nice. You can add as much or as little as you like. The citrus and coconut pair so nicely together. You can also add other types of nuts or dried fruit or leave them out entirely.
These hold up pretty well outside the fridge. They taste delicious, both cold and at room temperature. I prefer them at room temperature because the citrus pops even more, and they have a delicious fudge-like texture.
Oh, and did I mention they are easy to make? They only take a few minutes, so they are great to keep in mind for those times when you need a really fast dessert or sweet healthy treat.
Are Fat Bombs Healthy?
I know people have very different views on how much fat to eat in a day, so while my own diet is pretty high in healthy fats it will of course depend on your own personal views and dietary needs.
These treats are not only high in heart-healthy fat, they are also completely free of refined carbohydrates and sugar, and the fat helps you to feel full and satisfied with just a small amount. So it’s not like cookies or candy where you could eat a ton and yet somehow still be just as hungry as before you started.
People trying to reduce their sugar intake often complain about the lack of sweets in their quest to get healthier. That’s because a low-carb way of eating is very focused on eliminating harmful sugar from your diet. But there are options for that lingering sweet tooth in your life.
Hence these lemon fat bombs are both low-carb and packed with healthy fats and antioxidants. Eating more healthy fats are a great way to help to satisfying your sweet cravings without the nasty sugar that will spike your blood sugar levels to the moon and back.
Not only are these coconut candies insanely delicious they also come with some surprising health benefits. From vitamins and minerals to healthy fats that support hormone health and neurotransmitter production, these little delights are the perfect addition to any healthy eating plan.
Fat bombs are the perfect snack for anyone who tends to like desserts that are rich and delicious but not super sweet. Since they are so low in sugar, they are great for eating any time of the day, either on their own or as part of a meal – breakfast, afternoon, post-workout, or as a night time healthy snack instead of  potato chips or ice cream.
You will discover these fat bombs are BURSTING with flavor! The way the zesty lemon blends so perfectly with the coconut makes them taste like something really naughty. Except they fill you up and don’t make your blood sugar levels go wacko!
As with anything, moderation is key for these, but they are so filling that it’s much easier to feel satisfied even after just a small amount.
One of the main benefits to having these delicious fat bombs in my freezer is a good way for me to curb my sweet tooth and prevent me from overindulging later in the day when I am hungry. I hope this strategy works for you too. 🙂

Ingredients

  • 1 cup coconut butter, store bought or homemade sugar- free recipe below in notes
  • 1/2 cup macadamia nuts raw or roasted, chopped
  • 1/2 cup desiccated coconut
  • 1/4 cup coconut oil, melted
  • 1-2 tablespoons honey or maple syrup
  • 1-2 lemons, juice and zest (more if you like it really lemon-ey)
  • 1 teaspoon vanilla extract

Toppings

  • Lemon zest
  • Shredded coconut
  • Chopped macadamia nuts

Instructions

  • If you are going to make your own home made sugar-free coconut butter, make it first so its ready when you wish to make these delightful candies (recipe below in notes).
    Over low heat, in a sauce pan, warm the coconut butter and coconut oil until the oil melts, and the butter is smooth.
    Stir in the chopped macadamia nuts, shredded coconut, honey, vanilla, lemon juice and zest. Stir until combined. Taste test and add more honey or lemon if you think it needs it.
    Spoon the mixture into silicon snack or bar molds of your choice (I use mini silicone muffin cups), or you can spread it into a glass dish and then cut it into chunks later.
    Chill in the freezer or fridge for an hour or until firm.
    Store in an airtight container in your fridge or freezer.
     

Notes

If you are anywhere near the health food or fitness circles, you have no doubt heard of coconut oil by now.
